Diabetic/Low fat Dinner Ideas Please!!!

DH found out not long ago that his sugar is very high & he has high cholesterol too, he is going to be retested in 3 months and if all goes well his numbers will be down and he will not have to go on any medication. We have been having so much chicken & turkey!!! HELP, need dinner ideas please! Don't say fish, because DD suffers from migraines and cooking fish sets them off, so I can only make select fish until we can open the BBQ (DH not crazy about fish anyway!) Please give me your ideas, I swear I am dying for some PASTA! but the carbs are OUT too.....

Any ideas... we are having Chicken again tonight- Fajitas
 
I'd say go ahead and have pasta. Just make it whole grain, not white. Watch the portion size. We like the Barilla Plus. Find a sauce without added sugar.
Maybe look at a Weight Watchers cook book. You definitely need variety to beat the boredom and not slip back into old habits. How about vegetarian dishes......high fiber to fill you up, digest slowly and help with the cholesterol. Chili, soups, etc.

I agree that whole grains are great. Pasta, breads, rice can help regulate his blood sugars.

Lean red meat is ok too, just watch serving sizes. 93% or better lean ground beef gives you a lot of variety choices. A lean cut of roast or steak or a pork loin roasted, grilled or baked can be ok too. Lots of fresh veggies and fruits too!

Have you tried some pasta like Barilla Plus? It's whole grain and has less carbs than regular refined flour pasta. I really like it better than whole wheat pasta as it doesn't get gummy when I cook it.

Another substitution for pasta is to cook a spaghetti squash and then serve it with pasta sauce.

I also like to make port tenderloins and pork chops...I bake them with various seasonings like Mrs. Dash. Buffalo is also very good and leaner than beef.

Pearl barley has a low GI rating I eat it for breakfast, and sometimes use it in place of rice.
 
Go to drmcdougall.com. In the newspaper archives are 1000 fat free recipies.
Dh and I have been on this way of eating for 18months. DH is nolonger on any diabetic medications. His A1c last check was 6.5 down from 7.3. The food is very good. Yes you can have pasta,rice potatoes etc. There is lots of good info on why this type of eating works. Lots of sucess stories from other people who no longer have diabetes. This is one of my favorite quick meals. Enjoy
Black Bean Sloppy Joes

1 onion, chopped
1 green pepper, diced
1/3 cup water
1 15-ounce can black beans, drained & rinsed
1 8-ounce can tomato sauce
1/4 cup quick-cooking oatmeal
1 T soy sauce
1/2 T yellow mustard
1 t honey
1 t chili powder

Place onion & pepper in saucepan with water. Cook, stirring frequently until
the vegetables soften, about 5 minutes.
Mash beans with a bean or potato masher (do not use a food processor). Add the
beans and remaining ingredients into the saucepan and cook over low heat until
heated through, about 5 minutes. Serve on buns.

Thanks for starting this thread! I am trying to eat healthier. I have a strong familial line of diabetes. I was tested last month and I am good. I figure eating healthier can't possibly be a bad thing.

As for pasta, try Dreamfield's pasta. It is made for diabetics and is supposed to have no impact on your blood sugar levels. I had gestational diabetes and this and homemade pasta had no effect on my sugars. Where regular pastas did. So it can be an option. I can't live without my pastas!
 
Go down to the wish boards there are some weight watchers and south beach diet threads. There are some good recipes down there. If you do south beach, doctors usually recommend starting with phase 2 if you are diabetic.

Portion control is absolutely essential-cut out the white stuff and sugar.

We're eating an anti-diabetic/pre-diabetic diet in our household due to family history on my DH's side. Wishing your dh the best in getting his sugar levels into control. Is he exercising every day? That helps SO MUCH. I am always borderline GD when pregnant and exercise during my last pg. made such a difference in my levels.
 
I recently found out that I'm T2 diabetic and a few things I've found...

-mashed cauliflower in place of mashed potatoes
-crustless pizza, line a pie pan with foil and layer sauce, cheese and toppings
-LOVE spaghetti squash in place of pasta
-anything with beans seems to really help regulate my blood sugar (as do most high fiber foods) We had chili last night and beef and bean burritos tonight (I used lettuce instead of a tortilla).

When you do have something with carbs its best to pair it with high fiber and/or protein as this helps regulate blood sugar to prevent spiking.

Exercising 30 minutes a day helps regulate blood sugar.

Cinnamon, milk thistle, and aloe vera juice are natural supplements that have been found to lower blood sugar in scientific studies.
