Dessert recipe for a crowd??

We are having a large graduation party (about 75 people) in 2 weeks and I need to make a dessert. I usually make an eclair cake but I'm tired of it. Any recipes to share??? Thanks.
 
EQUAL PARTS ANY KIND OF YOGURT AND COOL WHIP IN AN ALREADY BAKED GRAMH CRACKER CRUST. Make as many pies as you think you will need chill til the are somewhat hardened. So delicious. My faves are rasberry or strawberry. Prep time is so minimal.
 
Buy a huge tub of ice cream and all the fixins and let everyone make a sundae.

What is the recipe for eclair cake? That sounds yummy!!
 
Just a coupleof days ago, someone posted a recipe for an ice cream sandwich/Cool Whip dessert that sounded delicious.

Basically it was layer ice cream sandwiches and Cool Whip in a 9x13 pan, and when you got to the top of the pan, pour Magic Shell over it then freeze it.

Quick, simple and if you made several of them, you could probably serve 75 people.
 

Berry,Berry Trifle:
Bag frozen blueberries
Bag frozen raspberries,sm container fresh raspberries
Lg container strawberries-hulled and sliced
sugar to taste
6 mint leaves
1 lg coolwhip (can be regular,lite,french vanilla or fat fee)
angel food cake, pound cake or lady fingers
4 cups vanilla pudding
1/4 cup Chambourd liquor (optional but really yummy)
Layer a large glass trifle dish,salad or punch bowl
Cake cut or torn into smaller pieces
Drizzle w/liquer or berry juice
Layer pudding
Layer berries w/sugar
Layer coolwhip
Continue layers (cake,pudding,berries,coolwhip)ending w/coolwhip
Place a few fresh straberries and raspberries as well as mint leaves on top as garnish
Keep chilled until ready to serve
 
Anginette cream puffs:
Buy 3 packages of Stella Doro Anginette cookies and slice in half to resemble cream puffs
Combine 3 lbs softened cream cheese,three sm containers coolwhip and 3 large drained cans crushed pineapple
Stuff cut cookies w/pineapple mixture and chill a few hours
They look like you spent hours working on them and are really yummy
Each package has about 25-30 cookies
 
I'm making Lemon Cheesecake Bars right now - I'll let you know how it goes. It was actually pretty easy. I combined two recipes together - One that uses a Gingersnap cookie/pecan crust (rather than the traditional graham cracker) and the filling of Philly cream cheese, lemon zest and juice, sugar and eggs.

If that sounds good, I'll email the entire recipe to you.
 
call local bakery - order a couple of sheet cakes. done!

that's the smart @$$ answer - I really do like to bake. even for a crowd. Make a bunch of flavors of pound cake in a bundt pan. Get a Duncan Hines cake mix and a complementary instant pudding flavor. add 4 eggs, 1/2 cup oil, 1 1/4 cups water. mix - add in nuts or chocolate chips or berries or whatever. bake at 350 for 50-60 minutes.

I have done this with chocolate, lemon, strawberry, etc. they are super easy, you just need to make several.

Chris I'm sorry I'm at work I'll post the recipe tomarrow. The quick version is I line a cake pan with graham crackers, I make French Vanilla Instant pudding and fold in Cool whip I pour it over the crackers then I layer more graham crackers, another layer of pudding and a final layer of graham crackers. On top of the final layer of graham crackers you make a spreadable chocolate frosting (using liquid Bakers chocolate and I think corn syrup) I post the particulars when I get home. You need to refrig it at least a couple of hours or overnight to let it set up. It does taste like an eclair and you can stretch it. I've made it in a large lasagna type pan and it always goes.
 
How about root beer floats? Make ice cream scoops ahead of time (freeze on a tray and then bag up) and assemble when it's time to serve

I have a version of this that is great:
1 Layer of Ice Cream sandwiches in a 9X13 pan
Pour 1/2 jar of caramel sauce and fudge sauce on top of sandwiches
Add a thin layer of cool whip
Repeat
Top with Chocolate curls.

I use this for church cover dish suppers all the time, kids love it.

Sounds great , is it served cold or room temp???
 
How about Heavenly Hash?

Sour Cream
Fruit Cocktail (don't drain)
Mini Marshmallows


Just buy as much of the ingredients that you think you will need and mix all together. Make the day befor to allow marshmallows to absorb liquid, to see if you will need to add a little more fruit.

Magic Shell is in the ice cream topping section of the grocery store. I believe it comes in a squeeze bottle. It hardens when you put it on ice cream.
