Desperate Need of Planning Help--Leave in FOUR days!

Ok, here's what I've come up with so far. Let me know what you all think:

July 22nd: Magic Kingdom early afternoon on arrival day, monorail to Chef Mickey @ 7:05pm

July 23rd: Blizzard Beach and mini golf, Kona Café @ 7:10pm

July 24th: EPCOT/MK@ night for parade and fireworks, Le Cellier @ 2:15pm

July 25th: Hollywood Studios/Fantasmic, Mama Melrose @ 3pm

July 26th: Animal Kingdom, 1900 Park Fare @ 8pm

July 27th: Typhoon Lagoon/Disney Quest, departure day for family

July 28th: Magic Kingdom, Crystal Palace @ 10:35am

Because our dinners are so late, it's hard to squeeze a possible Illuminations in there somewhere. What am I missing?

You could add a park day for $10pp for those who are staying on the 27th to go see Illuminations.
 
Here's another thought for July 26th. Most people don't spend the entire day in Animal Kingdom. Would you consider switching 1900 Park Fare to dinner somewhere in Epcot, which will have you there for Illuminations too.
 

I'll reply more when I get a chance :) but why don't you go back to the park after chef mickeys to see the fireworks on the first day then the day you have Epcot / mk just stay at Epcot the whole day and see illuminations?
 
this is what i would do to maximize your trip which most you have planned already but ill add some things :)

22nd: Magic kingdom early afternoon, chef mickeys, back to mk for fireworks.

23rd: blizzard beach mini golf and kona

24th: Epcot all day see illuminations that night

25th: Hollywood studios

26th: Animal Kingdom, back to resort before 1900 park fare for a break, 1900 park fare then to mk for EMH till 1 am. You might be able to see fireworks this night too it will be close but you could always do fireworks the first night see the parade this night at 11 and take advantage of MK the last night the whole family is there

27th: Typhoon Lagoon/ Disney Quest and DTD for dinner (earl of sandwich?)

28th: back to mk before you leave


This is what my family would probably do but whatever you decide you'll have an amazing trip!

Wouldn't you also make time for the family departing on the 27th to use their 5th park day? It seems kind of off to set an itinerary that spares that last day of admission for a few people to use their breakfast reservation when the others could also make a breakfast reservation on the 27th, or maybe somethings else in a park on the 23rd.

Also, I live just a couple miles away from MK, right behind it actually. It has been raining here every evening for several hours, 4pm to 7 or 8pm depending on the day. So get a lot of the parks in the morning done in case it raining too much in the evening. It is thundering like a monster outside even as I'm writing this.
 
My family loves water parks as much as the four major parks! I would try one of the water parks early in the trip to see how everyone likes them. You might be surprised.
 
#1 thing is to remain flexible. You have your ADRs set, so you are good. At this point you know the 2 big FPs are likely booked, but everything else should be available. Personally, I look at that itinerary and instantly want more time at the MK (if your flight leaves at 8 on the last day, you'll have to be back for ME by 5). However no one knows what your family will gravitate to, they may end up loving Epcot and want more of that park.
