Lets try this a third time... I tried to post this twice within the last half an hour and it never shows up anywhere.

At the end of our vacation our flight leaves MCO at 7:35pm, we are using Northwest and are planning on using the last day in the parks, what time should we make sure that we are done in the parks be heading to the airport?

Depending on what day you are leaving, I'd plan on arriving at LEAST 2 hours early at MCO. Factor in the time it will take to check in your car (sometimes we have waited up to 30 minutes if the line is long), check your luggage and get through security. The lines at security on Sundays can be as long as 30 minutes! You will also have to hop the tram to the gates. NWAs gates are at the END of the corridor, so it can be a hike!

Also, I was unable to print out my boarding pass at WL this past weekend for my flight home. It turned out that I was signaled out for an "extra" security check that took a few more minutes.

NWA gate area now has a food/beverage stand near the gate area. SPIRT took over the USAir gates and redid the area, so it's a lot nicer!

I would leave the parks no later than 4:30. Are you taking a car or using Disney transportation? Where would your luggage be?

For using Disney's Magical Express I would plan to be out the turnstiles at 3 PM. (You might not quite make that). The DME bus will be boarding at your resort around 4:35, three hours before flight time and you should be ready with your luggage a little before that. (Sometimes it can take 45 minutes to get your luggage).

With luggage in the rental car parked at the park, I would plan on having the car in gear and moving from your space at 4:35 (earlier, say, 4:15 for an off site rental agency). (You might not quite make that.) For Magic Kingdom that means out the turnstiles a little before 4 (3:40); the ferry boats may be running no more often than every 20 minutes and I really think the ferry is more reliable than the monorail when you are trying to catch a plane.

I will be using Disney Transportation. It is my understanding that I can leave my luggage at CBR after we check out until we are ready to leave for the day.
