Defrosting beef

Hey Everyone,

Here is a crazy question... I took out a 4 pound pot roast from the freezer yesterday at around 3. I was going to leave it out till about 9 or so and then let it finish in the fridge, but I feel asleep! :guilty:


So I woke up at 7 and it was still out... it is TOTALLY defrosted. Is it ruined?

IMHO yes. Even leaving it on the counter for the 6 hours you planned was too long. The inside may have been frozen, but the outside was too warm. It is alway best to defrost in cold water or the fridge but never on the counter.
 
Yep, way too long. Once the meat is warm it is very unsafe to eat. So even if the inside is frozen the outside that is warm is becoming a bacteria party zone.

Never defrost outside of the fridge. I'm ServSafe sanitation certified and some of the horror stories I learned about in that class make me VERY particular about how I handle food!

Well I'll admit I would probably go ahead and cook it if it smells good. Just sear the outside and the cook it for a long time.
 
I would have smelled it and if it smelled fine I would say Probably OK to cook it. On the other hand, I would worry about someone possibly getting sick.

A year ago I was buying some beef at the Butcher block area of the meat section and I casually mentioned I was buying dinner as I had forgotten to take it from the freezer to thaw.
During the conversation, the butcher mentioned that it was fine to leave the meat sit out on the counter as it would be fine for several hours. I was surprised to hear that and he went on to say, that beef can take it, but don't do it with chicken as it will spoil. So who knows?? :confused3
 
Buy a small piece of real granite. Meat thaws very quickly on it.
 
This thread sums up nicely why I don't eat meat dishes at potluck dinners!!
