This is tricky. I've never been to WDW during food and wine, but I have gone during Christmas and new years. I think if you are irritated by festival crowds, you will be more irritated by holiday ones. People are taking time off from work, kids have school off, the parks are decorated for the holidays, and it will be packed. On New Years eve, heading into 2014, Magic Kingdom was reaching capacity around 10 am. It was quite crazy. Granted, you will be there just before christmas and new years, I imagine the crowd levels will still be somewhat similar. But "regret"? I don't know. Based off crowds alone, possibly. But the decorations are breath taking. I'd never go again during Christmas/New Years but I'd be lying if I said I wasn't grateful I got to see Cinderella's castle decked out in christmas lights. If you are the planning type and enjoy getting up and going, then I'd say it's worth a try. If you know you'll be irritated by the amount of time crunching and organization it will take, then skip it.
