Any tips on holiday activities at Universal? we will only be there one night. What should we do? any special meals offered?

There is Grinchmas at IOA and the Macy's Parade at USO. No special meals last year until Christmas Day. You can check out the decorations at all 3 resorts.
BTW- This is the best time to avoid crowds at the parks.
