Now I know that normally after New Years Day the crowds drop quite a bit. However, with Christmas falling on the weekend this year, I know many schools will be taking their break later (Dec 23 to Jan 8). How much of an impact do you think this will make on that week for crowds? Any predictions on crowd levels?

ETA: I guess I'm just wondering whether it will actually be any worse than what we experienced this summer, which was 8s & 9s every day (we were there for the week leading up to July 4th, last park day was July 3)

Actually, in the past several years, schools have not gone back in to session until the second week of January.
Based on what has happened in these recent years, expect the WDW crowds to be high during the first week in January.
(Certainly not as high as is the last week of Dec., but far from "off season" attendance.)

7 & 8? Just curious how the crowds would compare to the 8 & 9s of late June/first week of July.

We were there this past holiday Dec 30 to Jan 4.
No other way to put this- it was MOBBED. Every park, Disney Springs, the restaurants, the roads. There were lines for the rest rooms. We flew out on the 5th. It would have taken a huge number of departures to bring crowds down to reasonable levels.

Yup.

If your schools are out, chance are a bunch of others are too.

And if school is out, crowds are in.

January 4-8 2017 is marathon weekend. That usually isn't bad though I've done it the last two years and never had any crowd problems in the parks.
