De-lurking

Hi all!
I've been lurking for the past few months, gathering info, and now that my OH and I are finally about to book, I've come to the point where I need to post questions to which I have been unable to find answers through my covert lurking.

As a brief introduction, this coming August will, for all intents and purposes, be our first DW visit. (I went way back in 1979 as a child, and my OH in 1980 and 1983, but does it really count since we were mere children? ) We went to Disneyland and CA with our two sons (now 5 and 7) in 2009, but that was just a taste of things to come. I can hardly wait!

Our 2008 trip was our first in 20 years. I was amazed at all that had changed, though not surprised thanks to my research on the DIS.

Probably the biggest change had to do with dining. When I was there in 1990, it was no big deal to make a reservation for dinner a few hours ahead of time. Now, you would have to be incredibly lucky to get a table at that time. We'll be making our ADRs 180 days out.
