That is quite the list of acronyms!

We are on the Disney Dining Plan and will be leaving in a couple weeks for Disney! This week, I submitted our pre-order for our Be Our Guest lunch reservation. Is it ok that on the confirmation it showed the amount owed? I had assumed it would show quick service credits 'paying' for the meal.

Also, we have a reservation for the Hoop De Doo Review dinner one evening. That reservation required a credit card to make the reservation. Will it be covered by our dining plan? I think it is a two credit meal, so will be pulled from our credit pool and then we will pay out of pocket for a meal later, right?

Lastly, my MIL will be joining us for 4 days in the middle of our vacation. We would like to cover the cost of her meals, but cannot add a meal plan to her reservation as it wasn't made through Disney. My daughter is 10 years old so we had to get the adult dining plan for her, but there is no way she will eat any more than a child's portion (and she actually prefers the child menu to the adult menu on most occasions). Is it ok if I use my daughter's adult plan for my MIL and then pay out of pocket for my daughter? Is this dishonest?

Yes. You'll "pay" with credits at the restaurant.

There is absolutely nothing at all dishonest about using an adult dining credit to pay for an adult meal.

Credits can be used to buy meals for any member of your party AND for anyone you might want to buy a meal for. If you want to use a full price Disney adult credit to buy a full price Disney adult meal, you can feed that meal to whomever you want. It's no different than using your snack credits on more expensive snacks to take home and buying sodas out of pocket.

Actually neither. It did have me enter my credit card number, but didn't charge me. It also didn't ask me if I wanted to pay with credits. Looking at my confirmation now, it does say that Disney Dining Plans are accepted (2 credits)

If you chose Cat 1 your credits won't cover it.

Third show you should ring em up. You may be able to get cat 1 that late. Earlier you can't.

It used to be you could get Cat 1 for the third show, but I'm not finding that little caveat at the usual sites, so they may have done away with that. You need to call Disney dining and see what they say and possibly switch to Cat 2.
 
I have the HDDR booked for next month, third show, category 1. I'm just about positive when I booked it, I was able to check off that I was using my dining plan and that the third show still allowed this.
 
Just checked with our travel agent and she's assuring me that the DDP can be used for Cat 1 seating, third show. Didn't check on first or second shows, but sounds like it will be covered for the third show.
