Lunch sounds good. Where? When?

I have to take Kristin to work at noon. We could eat downtown, if you want. Have you been to Otter House yet? Or we could do tea, or Capital Ale?

Ooh, lets got to Otter House. Haven't been but it looks good. So a little after noon?
 
so frustrated. Dad was supposed to start his second round of chemo today, He was supposed to be their at 8am CST. When they got their they said his oxygen sats were 79% so they wanted him to sit their and rest and see if it got better. He is always short of breath, lately. he cant get in to see the clinic lung Dr till Sept. hopefully the internal medicine dr he sees next monday can get him in sooner. we are giving him pulmorct breathing treatments with a nebulizer every 12 hrs and Albuterol treatments every 4hrs. I hope they can do the chemo today but not sure if he will be able to handle it as one of the side effects is Shortness of breath.

Alan is home from work today. At first I thought it was the dreaded "man cold", but it looks like it's turned into either pneumonia or bronchitis. He worked in the rain to get our garden in all day Friday, and I think that did him in! He's got an appointment to see the doctor in half an hour, so hopefully he'll be on a Z-pac soon after that, and will feel better!

On Saturday, we went to get Katie's new phone, and somehow, I'm not quite sure how, I ended up with a droid! I'm excited, but terrified! I don't have a clue how to use it! Luckily for me, the store is offering a droid class on Wednesday morning, so I'll go there and see what I can learn. So far, all I can do is make calls on the thing! I'd love to be able to access the DIS and FB from my phone! Cross your fingers that they can teach this old dog some new tricks!

just talked to mom and they were just finishing the chemo, he tolerated it well. next round is tomorrow morning at 10 am CST,. thank you for your prayers, please keep them coming.
 
It is 83 here with humidity at 52%. I went out for groceries and that was all I could take. Still having problems with my Vertigo. I am seeing the Dr today and will ask about maybe getting my allergies under control since that is what brought on the last episode. Now I am getting nauseous a lot too. This really sucks.

Colby's field trip is in the books. It was pretty cool here so the water activities didn't last as long as they had planned. At least it didn't rain. I also picked up the t-shirt/sweatshirt order and a few things for the class trip. Tomorrow I will need to finish getting everything together for that as well as all the grocery shopping. Sure glad I'm not paying for all the supplies :scared1: I need to get ready for work now.

LAKE BUENA VISTA, Fla. -- Disney posted more details on Thursday about a new restaurant location coming to the Mexico pavilion at Epcot.Disney announced earlier this year that the popular Cantina de San Angel restaurant would be expanding.According to a post by Disney food writer Pam Brandon on the Disney Parks blog, the new facility will include two food service options: the La Hacienda de San Angel and La Cantina de San Angel.Brandon said La Cantina’s menu will include chicken and beef tacos on handmade corn tortillas, nachos, epanadas and other offerings.La Hacienda, which will be open for dinner only starting at 4 p.m., will feature entrees such as roasted shrimp in pepper garlic broth, flank steak with spring onions and grilled red snapper with roasted corn and cactus leaves, Brandon said. In addition to main courses, Brandon said La Hacienda would serve appetizers including queso fundido, rib eye and roasted pork tacos and a traditional black bean soup. Deserts include chocolate churros, sweet tamales and fruit empanadas, the post said.The new restaurants are scheduled to open in the fall.

Nope, that was a new one Elin. :lmao: I like the sound of that. Is that the one that will be counter service during the day and table service at night. Chuck had read about that in the past.
 
Jennifer - I'm glad your dad was able to get his chemo.

Glynis - I hope Alan feels better soon. You will LOVE your droid! And it's VERY easy to figure out.

Debbie - How did your first day go?

Elin and I had a yummy lunch, which turned into a two hour social event. :rotfl: It was nice to sit and chat.

Tomorrow is Alyssa's awards ceremony and 2nd grade luau. I volunteered to help out with it, so there goes most of my day off tomorrow. But I enjoy hanging out with her and her friends. She told me that everyone in her class is getting an award for something, so I guess it's not as special as it sounded. :rolleyes: I hate that.
 
We made a really quick & easy meal tonight that was delicious. I got it out of the Taste of Home Summer Busy Family Recipes.

Southwestern Chicken Packets

4 boneless skinless chicken breast halves (4 oz. each)
1/2 tsp salt
1/4 tsp pepper
3/4 cup salsa
2 cups fresh or frozen corn, thawed
1 can (15 oz) black beans, rinsed & drained
3/4 cup shredded mexican cheese blend
1/4 cup sour cream

Place each chicken breast half on a greased double thickness of heavy-duty foil (about 18" square). Sprinkle with salt & pepper. Top with salsa, corn, beans and cheese. Fold the foil around mixture and seal tightly. Place on baking sheet. Bake at 425 degrees for 25-30 minutes or until chicken juices run clear. Open foil carefully to allowsteam to escape. Serve with sour cream.


We used Schwan's frozen oven-roasted chicken bites (6 in each packet). We cooked it for 35 minutes to get it hot enough all the way through. We also wrapped them in fajita tortilla shells when they got out. It would be really good over rice as well. Or add the rice to the tortilla shells. This was really yummy and tasty.
 
We made this last week. It was very tasty. Also from the same magazine.

Turkey Portobello Pasta
6 oz. uncooked spaghetti
2 cups cubed cooked turkey breast
1 can cream of mushroom soup, undiluted
1 cup water
3/4 cup sliced baby portobello mushrooms
1 tsp dried rosemary, crushed
1 tsp italian seasoning
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 cup shredded Italian cheese blend
1/2 cup sour cream
2 Tbsp shredded parmesan cheese
1 Tbsp dried parsley flakes

Cook spaghetti according to package directions. Meanwhile, in a large saucepan, combine the turkey, soup, water, mushrooms, rosemary, italian seasoning, onion powder and garlic powder. Bring to a boil. Reduce heat; simmer uncovered for 5-7 minutes or until heated through and mushrooms are tender. Remove from heat. Whisk in italian cheese and sour cream until smooth. Drain spaghetti; place in a serving bowl. Top with turkey mixture, parmesan cheese and parsley.


This was kind of weird with the spaghetti. We will definitely make it again but next time we'll use wide noodles instead.
 
It's been a great couple of days at home. I'm heading back to Lansing in the morning.

One day down, 7 to go. Tomorrow holds lots of errands and packing. Nick also wants me to go to his Language arts test as they are acting out Shakespeare. He's been practicing for days.
 
When are you having your meet in July? I think it is around the 16th but cannot recall for sure. My AP is burning a hole in my pocket. ;) Plus airfare on several dates in July is $40 or $50 one way before fees. Although I would prefer going to DL and DCA, I really want to see World of Color but I don't have a pass there.

That airfare sounds great! It has been crazy from here.
