DD is my DS11's favorite ride at IOA and we always have to ride both sides (multiple times if we're staying on-site), so ...
In my humble opinion, I would suggest you take your Mum on Fire first.
It seems (to me, anyway) to be a bit smoother than Ice and doesn't have that moment of "Aaah! We're going to smash into the wall!" at the end that Ice does.
Although if she does well on Fire, by all means, go on Ice too ... just go in the door that says "Re-ride" as you are exiting, so you don't have to go all the way back around to the entrance.

Hopefully you're going after June 4th because DD is going to be closed from 4/23-6/4. We're going to be there the first week of May so we'll miss out on riding it unfortunately.
I rode DD for the first time last December. For me, I though Ice was the less intense and smoother of the 2. It may have something to do with position in the train that gives the different feeling. I would suggest riding both of them as well. They are different from each other. Also, ride in the front if you can the near misses are best from there.
I would recommend going on "Ice" (the blue one) first. I noticed that "Fire" (the red one) had a drop that I really felt, but Ice wasn't as bad. Both are similar in excitement though.
