I was wondering if we can take DCL transport back to a WDW hotel where we could have lunch before getting a lyft to the airport?

No, DCL will not allow you to book a transfer to a WDW resort where you do not have a reservation.

Well darn =(
Any idea what the best way to get from port to WDW then back to the airport would be then?
Since this is not a common request, there is no ‘best’ way. Everything will cost a bunch, since WDW is 30 minutes past MCO coming from PC. You can either rent a car for the day, which is not cheap anymore and will require you to pay parking and gas, and will require you to go to the rental office, or take a Uber/Lyft/Limo for each leg of the way.

are you sure about that? I booked a shuttle from Beach Club to PC without staying there (we went by taxi to Beach club, dropped off our luggage for the cruise and then had breakfast at Cape May before getting on the bus. this was pre-covid though

It is a common question on these boards, one that has been answered no later than a few weeks ago. Maybe they allow it the other way around, but you can’t use a resort after a cruise as a one-day home base for exploring WDW without a reservation. You can’t book a transfer to a resort and Bell services will not hold your luggage.

So it sounds like the smart thing to do would be to take DCL transport to the airport, check our bags with hyatt guest services (getting a day Pass/Room) and then Lyft to wherever we decide to have lunch at WDW.

We follow Adam Hattan on Youtube. Him and Gary C booked dlc transfer from Port to Beach Club before flying
home to London the same night.
In Oct I booked a one way transfer from Port to Pop with not asking about my resort reservation.
I booked it at guest services while on the ship.

While it is not possible to book DCL Transfers directly to a park I don't think there is any restriction about booking to a resort. Likewise, there have been posts on the TPAS and Resorts forum that Bell Services will hold luggage for anyone, no reservation necessary.

I mean, do they ask you for your reservation number when you book? Worst case scenario, you try to book the transfers and they tell you "no." But really, I don't recall them asking and I don't think those systems are linked up.

I've had bell services store our luggage a whole bunch of times, but have literally never been asked "do you have a reservation at this resort." I honestly don't think they care. Didn't this come up in another thread recently? I don't recall the consensus but I remember thinking that I might try that very same thing because it's SOOOOO much cheaper to fly home on the later flight when we are there for our cruise in July and going to Disney Springs sounds way more interesting than hanging out at the airport for hours on end.

I have booked a ground transfer after my cruise for the Boardwalk, where I do not have a reservation. My traveling partner and I will be staying at the Swan Reserve, and since Disney's ground transportation won't provide service to the Swan and Dolphin, this was the closest they could get us.

This might be ideal for us then - hit one of the monorail resorts, have a meal - leave bags with Guest services then head over to Epcot for the afternoon.

I really want to try the new Remy Ride and we haven't been to world showcase in over 5 years which kind of breaks our hearts.

Buy a LL if you want to ride Remy. We were just there and the standby waits were multi hours in the afternoon. And, it broke down constantly. With a LL, you are guaranteed a ride when it starts back up.
