If I book a cruise with cash, can you convert the ressie to points, or use points for part of the ressie at a later date? I understand why it may not be the best use of points, but wondering if this is possible.

Technically no. Some have been able to coordinate canceling and rebooking to accomplish essentially the same thing but it's a gamble. Some of those have been able to keep the same cabin in doing so. The only benefit I can think of to this situation is the cancelation protection and possibly the delay in some of the payment.
