Day Three With Turkey Leftovers...

What will I make with the turkey now?

We have done the leftover dinner, and yesterday was a big pot of soup. Plus we've all had turkey sandwiches today.

I was thinking about shredding some in BBQ sauce for pulled sandwiches, or simmering the meat in gravy/seasonings for turkey burgers. Tomorrow will probably be turkey tetrazzini.

Any other suggestions?
 
How about turkey pot pie? I have made chicken pot pie before and I would imagine it would be the same but with turkey. It wasn't that difficult and it came out delicious.
 
What about Quesadillas?


I made a pork roast this year, because there were only three of us at home. Can you imagine the leftovers even with a small bird? :scared1:

Quesadillas sound good!

I make Enchiladas with cream cheese, salsa, onion, cumin and cheddar. Usually I use chicken but maybe I will make them with some leftover turkey.

We had a 15lb turkey for 8 people, plus a spiral ham (scalloped potatoes, mashed potatoes, turnip, carrots, peas, stuffing, gravy, cranberry sauce, rolls). No wonder we had more than half the turkey left!

I think that by tomorrow I had better either finish it up or use it in a recipe to freeze for another time. Not sure how long cooked turkey will last in the fridge (don't usually have this much left!)
 

Enchiliadas

2 cans Cream of Chicken soup, 1 cup sour cream, 1/2 package cream cheese, healthy shake of cumin, grated cheddar, can of green chilies and shredded turkey

Mix together soup, sour cream, cumin chilies. Put half aside.

Mix rest of it with cream cheese, cheddar cheese, turkey.

Roll it into soft flour tortillas. Put in pan and cover with rest of sauce
Top with cheese.

Bake at 350 for half hour.

Hot open sandwiches with gravy

Turkey & vegetable stirfry.

Instead of chicken salad, make turkey salad.

Turkey Caesar salad or turkey pasta salad.

I'd also freeze up individual portions, or portions of 4, so they can be added to dishes that can be heated quickly with precooked meat, like a turkey ala king, or turkey alfredo and pasta.
 
LOL, you're not supposed to EAT the soup when you make it; you're supposed to freeze the soup and consume it over time so that you don't experience turkey burnout.

We always make gumbo with leftover turkey on the second day -- after the sandwiches. It uses ALL of the remaining turkey (including the boil-down of the carcass), plus some purchased andouille sausage in proportion.

I can easily get 3 gallons of gumbo out of leftover whole-bird turkey; that's about 8-10 dinners for my family of 4. (I freeze it without the rice and add that separately on the day that we eat it.) We consume it over a period of about 3 months.
 
My DM always made turkey a la king over english muffins with leftovers.
 
I agree with PPs--it's turkey overload at this point in the week.

I would cut the remaining turkey into nice chunks and freeze them. In a couple of weeks, I'd make a turkey pot pie by mixing the defrosted turkey meat, a package of defrosted mixed vegetables, and a jar of turkey gravy. I'd put the mixture into a large casserole and cover it with canned biscuits, then bake until the biscuits are browned.

I agree about the overload. The turkey pot pie sounds good in about a month or so. Or even at this point, I would just toss it.
 
Turkey Chop Suey. Sometimes we make a small turkey just so we can have leftovers for chop suey.

How do you get "a week straight"? We are only on day 4! (Cooked it Saturday, leftovers Sunday, soup Monday).

Looks like I over-estimated the amount of turkey I had left. I made fresh gravy and diced the turkey into it with seasonings and we had turkey burgers. That just about took care of the rest of it. There is enough for sandwiches for lunch tomorrow, or maybe another pot of soup to freeze for another time.

I'd rather cook it in something to either eat or freeze, rather than just freeze the rest of the meat. I have frozen the meat in the past and found that it was only good for casseroles or something. I don't care for the texture.
 
Make turkey taquitos. Once they are all rolled up, you can put them in a zip lock bag and freeze them. Makes for a quick dinner down the road.

Sorry but I would not want to eat the same thing even 4 days in a row. 2 tops. After that it is either garbage or frozen.
