On day two we are going to Epcot as that is early entry day and park opens at 8(what time do you advise leaving all star movies)
Here we will see/do Sapceship earth, honey I shrunk the audience, Living Seas, Univers of Energy, Innoventions and then may be around 12-1 and we will head towards the world showcase. While one of us get in line for food at Electric umbrella the other two will walk and get a fast pass for Maelstorm then all eat at electric umbrella. After lunch we will do maelstorm. We will then start to tour the lands until 4:30 when we will go back to resort, freshen up and head for our 6:30 chef Mickey's PS . I figure the Chef Mickey's will be 6:30-8:00 and after that we go to Magic Kingdom towards the back at frontierland for the parade and fireworks. Should we be able to get through the congestion at front by castle if around 8?

If you need a break from the heat, you could do Journey into the Imagination and Food Rocks in The Land. There's also some other show type things in there, but I haven't been on them.

It should be possible to get around the congestion at 8 p.m. although crowded. Have you thought about taking the train from the front to Frontierland??

I would strongly suggest taking a break in the middle of the day--after lunch. I don't know how long your trip is, but you could come back some evening, when it's cooler, to do World Showcase. In the heat of the summer, a break is a must for ME, much less my kids. Also it gives you a chance to enjoy the hotel pool.
