Cupcakes and cookie recipes

Does anyone have a recipe to make cupcakes and the big soft cookies that you get in WDW? I am thinking (gasp) of trying some baking at some point, and I would love to try making these. Obviously I'm over in Scotland, so some of the ingredients might not be available I imagine, but would be grateful if you could advise!!! Yum!

If you go to Food Network's web site, look for the chocolate chip cookie recipes from Alton Brown's show Good Eats. He has a recipe for chewy cookies that is wonderful!!
