CS Deserts

Will the CS restaurants allow you to subsitute a side item from their menu(say an extra order of fries or a fruit cup) in place of the normal desert?

Generally, no. CS meals generally need to match the spec outlined in the brochure. However, it cannot hurt to ask. Sometimes the CMs are feeling generous and will allow substitutions, and sometimes not.

The person ahead of me at CHH last fall said he didn't want a(nother) piece of chocolate cake, so the CM suggested that he get a cup of chili or chowder instead.

Unfortunately, what is and isn't allowed can vary by restaurant, day, and even CM, so you'll probably have to ask every time, and don't be surprised if the answer changes frequently.
