We're planning on spending 2 days at Universal between November 8 to November 16th. What are the best days to visit assuming we want the least crowds? Does anyone know if Veteran's Day is really busy? Do most people take the Monday off and have a 4-day long weekend?

I highly doubt Veteran's Day (or around there) will be busy. Not many schools in Florida get that day off from school...at least not that I'm aware of. Though just last year Sarasota County started taking Veteran's Day off. BUT I don't know of any kids going to Universal...many went a while back for Labor Day and they don't go as often as I do. But I'll find out for sure, myself, when I go for my birthday trip November 8 - 11.
