Crowds, plans, transportation for Sept... HELP!!!

OK, I need lots of help... :)
I tried to do the search thing and it gave me an error... sigh...
So I apologize in advance for asking what you guys might think the same questions over and over again.

My last trip to US was around 8 years ago (before IOA was opened).
So I'm sure I'm missing out on a lot.

We (DBF and I) will only have 1 day to spend on both parks. We're not planning to hit the kiddie rides (if there are any, don't remember anymore), more like all the newer rides (the ones I haven't been on: Spidey, MIB, etc.).

Our day of choice is Sept 6th (wednesday after Labor day).

Now here's my question:
1. Is it feasible? 2 parks in 1 day just for the new(er) rides
2. How is the crowds in past history?
3. Will I need to get FOTL pass? Do they have FOTL pass for everyday? I checked online and the only have special day ones ($50/pp!!!)
4. What is the best way to get from Disney resort to US/IOA? I checked on Mears and they seem to have the best price $15pp RT. But they take 30 to 45min to get there and the earliest pick up is at 8:25am. So is there a better option that won't break our bank?
5. Does anybody have any suggestion on how I should hit the rides and parks to make sure I hit them all in 1 day?
6. I'm also a foodie, is there a specific place I absolutely have to try (if time permits of course)?
7. What is the most decent counterservice place in each park (not sure if there are good ones or bad ones)?
8. Any other suggestions, ideas, tips, to make sure I can hit them all in 1 day and not collapse? ;)

Phew... I know I have lots of questions.
But I thank you thank you thank you for your help.
You have no idea how much I'd appreciate this...

ps: If anybody has questions about disney vacation I can definitely help with that... unfortunately I'm a newbie on US/IOA
 
Me and my girlfriend did this last year...buy the pass for both parks to skip the lines...we were able to hit all the rides we wanted to in both parks within one day. Just plan out which rides you would want to do. We were even able to hit some of our favorite rides twice!!

September is usually about as slow as gets...however, I hesitate because of that holiday weekend just before you plan to go. Maybe one of the employees who frequents these boards will have good info on that.

Assuming it's as dead as it is any other time in September:

1) Yes (we don't do the child rides, either, and only a few of the shows)
2) See above. Ghost town aside from that holiday time.
3) No, I don't think you'll need FOTL. And they're $50 during the summer and peak times. I was there in February and they were $15 or $20 per person.
4) I've always had my car, but when we plan on drinking, we take a cab. It's just extremely flexible and there are no schedule times we have to fuss with.
5) Not necessarily. I think this would boil down to preference and where you might like to have lunch.
6) The fish & chips at Finnegan's at Universal is unreal. Big beers to go with that, too, please. We also like Mythos and the Grilled Chicken Caesar Flatbread Salad at Confisco's at IOA.
7) These answers, I'm sure, will vary. Personally, at IOA, the sandwiches at the Dagwood place in the Toontown we like, as well as the burgers at the Popye area (can't remember the name...Blimpies?). For Universal, if you decide against the fish & chips, we've had a good burger at Richter's around the Earthquake ride.
8) Have a blast. Come to CityWalk at night and enjoy the shopping, clubs, food (excellent for foodies), and nightlife.
