On busy days, do crowds in the parks tend to thin out noticeably at dinner time, or not?

I don't think so. "Dinner time" is offered from about 4:00p to 9:00p most places, so that spreads out the dinner time crowd.

Also, especially during crowded times, people tend to eat "off schedule" - late lunches, early dinners, etc. to avoid the crowds at restaurants or CS..so I don't think there really is a "dining time" when most people eat. People tend to eat constantly at Disney....

Yeah ... parades and fireworks shows do cause notice-able effects, dinnertime not so much.

Afternoons are the busiest times. Dinner is spread out so there is no big drop just around starting around 7 PM you will notice the crowd slowly thinning at MK. This is more families with small children, experiencing their children run out of steam. There is a big thinning after the parades, fireworks etc.
HS starts thinning when Fantasmic starts. Still not much relief for TSMM. Don't know if FP+ will affect RNRC. In years past when Fantasmic was starting the wait time went down greatly.
AK closes too early to have an affect and EPCOT stays busy until Illuminations and then it closes.
