crockpot nacho recipe help

We are going to a New Year's Eve party and I was thinking about bringing some kind of dip in my crockpot. Does anyone have a good dip recipe- for nacho dip or anything else? I have looked at recipes online but often when I make something no one likes it and I end up throwing out ingredients- big waste of money. I thought I'd ask here fo tried and true recipes.

From my Crockery Cookery -- I usually double.

1 1b. Velvetta cubed
1 can chili without beans
1 small can chopped chilies
4 chopped green onions

Heat 2-3 hours on low until melted.
 
2 boxes Velveeta
1-2 pounds cooked and crumbled mild sausage
2 cans of Rotel (this is a name brand of diced tomatoes and green chilis usually in the aisle with the chopped tomatoes and tomato sauce)

Combine in large crock pot (can be cut in half for the small round upright crocks)

melt and serve with tortilla chips or sturdy crackers....

YUM

Never thrown out any, never had any left over to throw out.
 
We do:

Velveeta
Can of chili - no beans
Jar of picante sauce
 

Large block of velveeta cheese, 2 can cans of rotel and 1 pound of cooked hamburger meat or sausage.
 
One can of no bean chili for each jar of salsa con queso(medium). Tastes similar to Chili's Skillet Queso.
 
Hamburger Dip:

1 pound cooked ground beef
1 8oz bar of cream cheese
1 regular size jar of salsa (mild to hot, your choice)
1 jar cheez-whiz

Mix together on stove top until melted, then put in crock pot to keep warm.

My family and friends love this stuff!
 
Mexican Dip

1 stick marg.
2 cans white or shoepeg corn
1 can rotel tomatoes--with green chilis
1 8 oz cream cheese
cumin to taste (about 3 teaspoons)

Melt butter, and saute corn for 3-4 minutes
add tomatoes, and heat
melt in cream cheese, and then stir in cumin

Serve w/ corn chips, or celery. The lime corn chips are really good.


You can transfer to the crock pot to keep warm
 
I stick with the loaf of Velveeta, 1 can no bean chili (typically Hormel), and 1 can of Rotel diced tomatoes with chili.
 
we do 2 cans Hormel chili no bean, 1 package cream cheese, 1 large bag shredded cheese...
 
Chili Cheese Dip

1 lb. Velveeta Cheese
1 Lb. Ground Beef - cooked
1 8-10 oz. can Rotel tomatoes and green chilies
2 tsp. worschestershire sauce
1/2 tsp. chili powder

Cook on high in crock pot for one hour... stirring occasionally.

Can double, triple or even quadruple (this is what we do) in a 6 qt. crock pot.

There won't be any left!!!! :thumbsup2

cream of mushroom soup
proportions to taste
boulion cube (or beef broth if you want it a little thinner)

also great to put in a bread bowl and dip bread chunks...

One can of refried beans to one jar of nacho con queso sauce. Just heat and serve. Easy, cheap, and everyone seems to love it. :thumbsup2
