Crockpot cooking help needed, please

I have 2 pretty large pkgs of split chicken breats (bone & skin on) and would love to throw them into the crockpot for easy cooking. I could even do it overnight tonight.

I don't really have a lot of spices, etc on hand.....but I do have bbq sauce, terriakki sauce, no cream of mushroom, but maybe cream of chicken.

Any advice would be greatly appreciated.
I found my self in the middle of some family drama tonight, and now I am working doubles shifts tomorrow & Friday....so a easy crockpot cooking is what I would love to do.

I will usually put some Italian dressing with my chicken in the crock pot. Also, if you have a pepper and onion.

Chicken and a jar of salsa if you have, is also tasty.
 
5-6 pieces of Chicken
one package of taco seasoning
one large can of corn drained
one large can of black beans rinsed and drained.
15oz jar of salsa - it can be hot, medium or mild depends on how hot you want it.
Dump it all in the crockpot and cook on high for 5 hours or low for 8 then serve over rice.
 
Cut up several potatos in wedges. Put frozen chicken breasts on top. Pour one bottle of italian salad dressing over the whole thing. Cook on high 3.5 hours or low 7-8. (my kids favorite meal).

I also make the one up above with the salsa/black beans/corn etc. I also do the following variation:
Cut up chicken into bite size pieces. Place one bag of southern hash browns (the shredded kind) in bottom of pot. Add cut up chicken. Add 2 packages of taco seasoning, 2 cups water, 1 can mexican corn, 1 can black beans, 2 cups water. Stir together, cook on high 3.5 hours. It makes kind of a tortilla soup. Serve with fritos/crushed tortillas and grated cheddar cheese/mexican cheese.

Cut up one onion into rings and put on bottom of crock pot. Place frozen chicken breasts on top. Mix 3/4 cup soy sauce, 1/2 cup vinegar, and garlic powder to taste in a bowl, pour over. Cook on high 3.5 hours. In last hour of cooking add frozen stir fry vegetables to the top.

Place frozen chicken breasts in crock pot. Pour one bottle of BBQ sauce of your choice. Cook on high 3 hours. Take chicken breasts out and shred them. Put them back in crock pot, mix with BBQ sauce already in pot, reduce heat to low and cook 30 more minutes. Serve on buns (shredded BBQ).

I use those crock pot liners from Reynolds. Makes cleanup a snap.

Here's my contribution:
2 cups Uncle Bens Quick Cook rice
1 box (classy I know;)) Chicken Broth
1 can coconut milk
1 can pineapple chunchs or bits whatever you have
Salt, pepper, curry, ginger optional, just add the spices you like. I just happen to like those mentioned. You could also throw a little soy or terriaki sauce in for flavor.
chicken breasts (however many will fit)

Mix the 1st 4 ingredients and spices in the bottom of the pot. Place the chicken breasts on top. Cover and cook on high for 3 hours or low for 5-6 or until the chicken is cooked through.

This can be very sweet depending on the spices you add or don't add. My family just happens to like it that way.

Probably too late now, but one of my faves is chicken breasts, onion, green pepper, a jar of bbq sauce and a can of big pineapple chunks. Serve over rice, which you can make in a rice cooker while you're setting the table and getting everything else settled after work.
 
I love my crock-pot liners! Genius invention.

OP, I'd salt and pepper the chicken. Line the bottom of your crock pot with large slices/rings of onion. Place the chicken on top and pour a bottle of root beer over it it. Simmer on low for about 8 hours. Drain out out the liquid and remove the chicken. Shred with two forks and then put back in the crock-pot-- mix in the BBQ sauce you have on hand (as much as you want!) and simmer on low for another hour. Yum! It's hearty, simple, and you can eat it a variety of ways-- on buns as sandwhiches or with a nice baked potato and veggies on the side.

Your chicken will work with any of the items you said you have. Even bone and skin on will turn out just fine. If you have a cream of whatever soup just add a little milk or water to make it go farther, otherwise just add the BBQ or Teriyaki as you prefer. You can add to it with veggies but there's no need really, it will cook just fine with just the "sauce" you chose. Also, the skin will probably come off (mine does) and the meat will fall off the bone very easily.

Crock Pot "Baked" Potatoes
This is a great way to make "baked" potatoes on a hot summer day without heating up the house.really nice when i get home from work. The potatoes come out with a deeper yellow color when cooked in the crock pot but they taste just like they do in the oven and the clean-up is quick and easy. Top with your favorite fixins!
Crock Pot "Baked" Potatoes
4 medium russet potatoes
aluminum foil
Toppings (extra pts): light sour cream, fresh chives, bacon bits, broccoli, cheese
Wash and
scrub potatoes until clean.
Drythoroughly. When dry,
prick potatoes with a fork and
wrap in aluminum foil.
Cook on low for 8 hours or on high for 4.

One of my favorite blogs just commented that she puts 2-4 chicken breasts in a crock pot with water just to poach it, and then has shredded chicken on hand for quick meals during the week. I think this concept is brilliant! You then have the base for enchiladas, chicken soup, chicken & dumplings, chicken salad, casseroles, and so much more!

This is also delicious if you add 8 oz. of reduced fat cream cheese about 1/2 hour before serving. Just throw the whole brick in. Then stir after about 1/2 hour (it will be soft enough).

I do this without the taco seasoning. When its done, I shred up the chicken and use it (with a little chese) to make burritos. Makes 8, which equals 2 dinners for us and 2 lunches for DH.
 
I made this the other night:

Lined bottom of crock-pot with 1 pound boneless, skinless chicken breasts

Poured 1 box dry Stove Top mix on top

Mix together 1 can cream of chicken soup, 1/2 cup sour cream, and 1/4 cup water. Pour on top of Stove Top. Cook on LOW for 4 hours. Fluff and serve!

this is my favorite too! We add 8 oz of cream cheese for the last 30 minutes and eat it with tort chips. Prob not as healthy but super yummy.:love:
 
I make a batch of salsa chicken and shredd it (never used bone in chicken so I don't know how that would work). I then have enough for 2 meals...quesadillas, burritos, nachos, salad, etc. If I put in 4-6 breasts I have enough for 3 meals. A little chicken goes a long way. I make taco soup (add beans, corn and tomatoes) or whatever else you like and everyone loves that on a cold night, it's good served with cheese, sour cream and tortilla chips.

I love the liners, but they're not perfect. I still find juices in the crock, but it doesn't get that burned ring (as the liquid cooks down).
