Crockpot and Easy Meals "Index post 372"

I have 2 meals planned for it this week and its leaking. The last time I used it I noticed a puddle on the counter. The weird thing is its leaking from the top. The heat/steam seems to lift the lid slightly and water somehow drips out and into the non cooking piece as well as onto my counter. I just bought it about 3 months ago because I found a crack in my old one. I guess I'll call the manufacturer and see what they say.

I did the Boston butt, BBQ sauce and Cherry Coke today, turned out great. I'm going to chop up the leftovers, add more bbq sauce and have bbq sandwiches for the big game tomorrow. Keep these recipes coming.

I'm planning on doing the Boston Butt with Dr. Pepper and BBQ Sauce in the morning. GRISWALDS...How many lbs. was yours and how long did you cook it? :)

Does anyone have a good recipe for pork spareribs in the crock? I don't know if it's been posted before, but this thread is too long to go all the way back and search. We really need an index, don't we? :wizard:

Not for a crock pot but good and easy to make.

Tater Tot Casserole
1 1/2 - 2 pounds hamburger
1 Family Size Can Cream of Mushroom soup
1 Bag tater tots
1 8oz bag Colby Jack Shredded Cheese

Cook Hamburger with salt and pepper until done breaking it up as it cooks.
Drain Well.
Mix meat with Cream of Mushroom Soup warm slightly.
Spread into bottom of 9x13 cake pan.
Place tater tots on top of above mixture. (laying them neatly out to form rows).
Cook 35-40 min at 350 deg.
Spinkle cheese on top (I use about 3/4 of the bag) and place back in oven till cheese is melted.

Let set 10min before serving.

I love this recipe.. I usually add mixed vegetables to mine. My family loves this one!

Pepper Steak

2-3#s bottom or top round, thin, frozen, cut into strips (excess fat removed)
1 small can of tomato sauce
worcheshire sauce
hot sauce
2 tbsp brown sugar
1 package brown gravy mix
1 medium onion julienned
1 green pepper julienned
1 orange/red/yellow (which ever color you have) julienned

Put crockpot on low. Add tomato sauce, few shakes each worcheshire and hot sauce, brown sugar, brown gravy mix. Mix to combine. Place frozen beef strips on top. Place veggies on top of meat. Cover. Cook 6-8 hours low.

Serve over noodles or rice. Meat is extremely tender.
This recipe was one of my family's favorite ! It was delicious!

Three Pepper Steak

14 1/2 oz diced tomatoes

Trim all visible fat from steak then place in bottom of pot. Place everthing else on top. Cover and cook on low 6-7 hrs. I serve this over rice.

Mexican Beef Stew

3/4 C water
1 Tbs minced garlic
2 Tbs canned chipotle peppers
2 tps olive oil
1 large chopped onion
2 Tbs canned tomato paste
1 1/2 lb lean stew beef
2 large carrots
12 small red potatoes, quarter
1/2 tsp ground cumin
1/4 ground cinnamon
1/4 tsp table salt

Place chipotle, garlic, tomato paste and 1/2 C water in a blender. Blend on high to make smooth sauce. Add more water as necessary to make loose sauce; set aside until ready to use.

Place stew beef into pot, pour sauce on top then spices, then add potatoes and chopped carrots on top. Drizzle olive oil on top.

Cook on low for 4 hours and then stir and then cook other 3-4 hours.

Just want to say "thank you" all for a great thread. I can't wait to try some of these recipes! :thumbsup2

I had a 5 lb butt (don't I wish:lmao:) and cooked it 10 hours on low, although it was probably done after 8-9 hours.

Whatever you do don't post that on the thread for the mom that did 1 year of menus:lmao: I'm thinking that wouldn't pass the muster for healthy nutrition moms.:rotfl2:

Just kidding. I mean the tater tot casserole not the chili BTW. Not sure how chili would pan out in that discussion.

chicken and corn turned out good yesterday. We prefer fried chicken but this was good - loved the corn. I was worried about it - it was frozen and we'd had it quite awhile - but turned out yummy. As for my first use of a liner....well, it did good until I started taking the chicken out of the bottom. Some of the chicken stuck to the bag and when I tried to take it out it shifted the bag, the side fell down and some of the juice leaked out into the bottom of the pot instead of in the bag. But that is still better than having the chicken stuck to the pot itself.

I have attempted to make an index post of all the recipes in the thread so far. The name of the recipe or if no name is listed the type of recipe will be listed as a link to the post with the recipe itself. Hope that makes sense and maybe the OP can change the name of the thread to reflect which post has the index and I will try to keep it updated as time goes on.

THANK YOU!!! WDmommyof4!
I have been printing these out, but missed quite a few.

I made the chicken taco soup that's mentioned in post #16 several months ago...I got it from a different site but it's the same. Our PTA did a "Souper Teacher" lunch....everyone brought in different crockpot soups for our teachers on a halfday at school. It was awesome!! The teachers loved that soup.....I was the only one who didn't have any leftovers!

It was no problem. I got tired of having to go back and find a certain recipe each time I wanted it lol.
