Crock Pot Meals

My family will be at the wilderness in a couple of weeks. My DW and I were wondering what to fix and eat for a couple of days. We were wanting to put something in the Crockpot and let it cook all day so it is ready to eat when we get back. That said late July at Disney is hot. Many of our crockpot recipes are great but not really designed for eating outside in 90+ degree heat. We have a pop-up and yes we could eat inside we prefer not to unless it is raining heavy. Any suggestions?
Let me caveat. We are trying to go with a smaller cooler for the trip down so that will rule out some of our favorites like a pork shoulder slow cooking all day and making pulled pork sandwiches or a pork loin etc.
 
I often use the Crock Pot just to reheat left overs or take out (such as Wendy’s chili over rice from our rice maker). I can wrap something in foil or use the disposable liners and only have to wash the lid and spoon afterwards. I put something in to warm it, then go swim in the pool or take a shower and don’t have to worry about it burning. Sometimes I double a recipe at home and freeze the left overs in foil to take to the next camp out. It helps cool the cooler and is ready to warm up when it is thawed.

We also make deluxe oatmeal (oatmeal, chopped dried apricots, walnuts, and raisins, brown sugar and cinnamon, all prepped at home and kept in a ziplock in the cooler til ready to use) in the Crock Pot overnight and have a wonderful breakfast waiting when we wake up.
 
I just made some chicken tacos in a crockpot. It has to be a small sized one. Four chicken breasts, fajita seasoning, a can of rotel, a 4 oz can of diced green chiles, and 1/2 cup of water or chicken broth. Cook 8 hours on low then shred the chicken. Stir in 1/2 cup of sour cream. Serve on flour tortillas
 
McCormick makes a seasoning packet for the CP called "Fiesta Chicken". It's pretty good. I often make it upon arrival at a campsite and cook on high for 4 hours rather than low for 8. Mix the seasoning with a two cans of diced tomatoes, a can of black beans and a can of corn, pour over chicken breasts and cook. Shred chicken when done and mix.
