I LOVE my crockpot, couldn't live without it. Today I am making BBQ chicken in it (I ususally make Fruited BBQ Chicken, but we're out of fruit) Later I'll make some rice to go with it...

What exactly is "fruited bbq chicken"?

I have printed out so many recipes from this thread, I could cook for a month!!! Thanks for all the ideas!!! :thumbsup2

I just wrote down 7 new recipes from this thread ~ thank you so much!! :sunny:

Here is one I like to do for an appetizer:

1-2 pkgs. Lil Smokies
1 pkg. bacon (cut strips in half)
1/2 C brown sugar

~Spray crock with Pam.
~Wrap each sausage in a half slice of bacon and secure with a toothpick.
~Sprinkle the brown sugar over the sausages and cook on low for about 6-8 hours.
~Check after 6 hours to see how the bacon is coming along.

These are really tasty!! :teeth:

I want to adapt a recipe from the back of a cream of chicken soup can but don't know how long I should I should cook it for in the crockpot. It uses boneless skinless chicken breast halves. I don't want the chicken to get dried out!

probably 4-6 hrs on LOW. I've seen some recipes say 6-8, but I certainly wouldn't do it for more than 8...

I just finished copying all of these fantastic recipes. I can't wait to try them. Thanks to all who posted.

Heres my favorite:

Cheap Beef Roast any size (I cook it from frozen)

1 bottle barbecue sauce (I love Sweet Baby Rays)
Package of French onion soup mix
2 cans of cream of anything soup
canned or frozen corn
canned or frozen green beans
cup of water

Throw it all in the crokpot. cook on low for 8 hours.
Serve w/ mahsed potatoes or on keyser rolls.

I modified this a bit to what I had on hand, but it was pretty tasty! We had it with rice, but it would have been much better as sandwiches (b/c of the bbq sauce). :) Thanks! I might try it without the bbq sauce next time...

Does anyone have any light or healthy recipes for the warmer weather? :sunny:

That is such a good question to ask, I don't seem to use my crockpot in the summer much and it sure would be nice to still be able to have something cooking while we are out enjoying the day. Maybe some will have suggestions.

Tomorrow I am placing a whole turkey breast skin side down and pouring a can of low sodium chicken broth over it. It comes out so moist. My kids hate turkey but they honestly love this. When storing it make sure that you pour the juices over the turkey to keep it moist. Helps to have it to reheat it as well.

I posted this previously...definitely light and healthy! :) serve with a salad and/or lots of veggies! You can double, triple, etc...

easy!

I made the easiest chicken recipe last night. Ok, so it's not as easy as throwing chicken in the crock and pouring a bottle of BBQ sauce over, but nearly so.

Super Easy Crock Pot Chicken for 2

2 chicken breasts (with bone and skin)
1/2 bottle Ken's fat free Italian dressing
1/2 c. white wine

put chicken in crock pot
pour dressing over top and flip chicken to coat
pour wine over top

cook on LOW for 10-12 hrs

serve with lots of the sauce over top

rice or bread will go great!

let me know what you think!

Just contributing since I got so many from ya'll!

Crockpot Ham with Cheesy Potatoes
1 Bag (28 oz) of frozen diced potatoes with onions & peppers (thawed)
2 cups shreaded cheddar & monterey jack cheese blend (8 oz)
1 can (10-3/4 oz) condensed cream of celery soup
1 container (8 oz) sour cream
3-pound fully cooked smoked boneless ham

1. Spray 5- to 6- qt slow cooker w/cooking spray. Mix frozen potatos, cheese, soup and sour cream in cooker. Cut ham lengthwise in half, place ham on potato mixture.

2. Cover and cook on low heat setting 5 to 6 hours or until potatoes are tender.

3. Remove ham from cooker; place on cutting board. Gently stir potatoes well before serving. Cut ham into slices, serve w/potatoes.

SALSA CHICKEN

4-5 frozen boneless/skinless chicken breasts
1 jar of salsa
1 can of black beans, drained
1 small can of corn
1 block of cream cheese

Place frozen (YES frozen) chicken breasts in crock pot and cover with salsa, black beans and corn (I also added a small can of olives). Cover and cook on high 4-5 hours, or low 8-10. At the last half hour, place block of cream cheese in. Stir and serve!
I served this with some tortillas, warmed up.

For those of you who cook your meat ahead of time and freeze it, what do you freeze it in? Freezer bags or containers? What brand do you find does the best so it doesnt get freezer burned? I have a new freezer but it tends to even get ice crystals on things that are not even opened.

I've only skimmed over these pages but some of these recipes look fantastic. I just wanted to say thanks for all the great recipes. I'm sure I'll be trying many of them! I hope to contribute some soon!

Just found this thread.

I am looking for some good appetizers or bean recipes. Anyone have any of them?

HAven't had a chance to go through all the pages but wanted to share my two favorite recipes.

New England Pot Roast

(sorry do not use measurements)
carrots
potatoes
onions
salt and pepper
pot roast (brown in skillet first)
horseradish
water or beef broth

mix first 4 ingredients, place roast on top, pour about 1 cup water or broth put about 1/2 a jar of horseradish on roast. cook 8-10 hours

The horseradish mellows way out and this is great.... thicken remaining liquid to gravy or not your choice.

Swwet Potatoes

cubed sweet potatoes
applesauce to coat
cinnimon (spelled wrong)
brown sugar
and butter to taste

cooks on high in about 3 1/2 hours low 6-7

oh and if I have them I add pecans or walnuts too

I didn't discover this thread until last week. (Thanks to the person who posted a link on the budget board. :) ) I've tried a couple of the recipes already. The roast was wonderful. We also thought the chocolate cake was very good. Does anyone have any more good crock pot, dessert recipes? More low fat, dessert recipes would be great! I'll take any that are easy though. :teeth:

:thanks:

Ooooh, this thread made me hungry! I'll definitely be trying a few of the recipes- especially the chicken with salsa (I love the recent post with the addition of black beans and cream cheese!). Here's my favorite- Pepperoncini Beef. It's awesome if you like your food a bit spicy!

1 3 lb. beef roast (whatever you have, something cheap is perfect)
1 (12-16 oz.) jar of Pepperoncini peppers
1 envelope dry Italian dressing mix
A few cloves of garlic, peeled and chopped into a few pieces each. The more the merrier, as far as I'm concerned.

Put roast in crockpot and rub the dry Italian dressing mix all over it, all sides. Cut holes in it with a sharp knife and insert the slivers of garlic into the holes. Pour the whole jar of peppers in, including the liquid ^_^ I think you're supposed to cut the stems off first, but I'm too lazy to do that so I leave them on and it's fine. Cook on low for 10 hours or so, high for 5 to 6 hours if you need it faster. Take a fork and shred the beef up! Pile it onto rolls with melted cheese (we like provolone, but anything would work). MMMM!

here is a great dinner-

layer 4 large chicken breast on bottom-can be frozen. Cover with slices of cheese-we like provelone, I have used good old American in a pinch. Cover this with can of either cream of mushroom or cream of chicken..dump a box of stove top-I use chicken or turkey flavor, melt 1/4 cup butter and drizzle over stuffing mix. The steam/condesation cooks the stuffing...Smells so good and taste great. Add a veggie and dinner is done.

Does anyone know the minimum amount of time this needs to cook on high? I put this on earlier today, but didn't notice my crock pot wasn't plugged up until 1:45. :rolleyes1 The chicken was still frozen, so I'm not worried about it not being safe. I just need an idea of when we'll be ready to eat. TIA :)

I ended up leaving it in the crock pot on high for about 5 hrs. & it was wonderful. My DH raved about how moist the chicken was. :teeth:
