Couples trip, nothing fancy, what to book?

I am tentatively planning a trip for next January/February for 6 nights for my husband and I. No parks, just relaxing, visiting Disney Springs, maybe a water park if it is oddly warm.
We are not fancy diners at all, but do like a good meal. We don't generally get drinks or appetizers or anything, but love good quality food. My husband can be a big eater, so he doesn't like skimpy portions. I am looking at a split stay between CBR and AKL for 6 nights. Can you recommend some dining outside of the parks that would be fit the bill? Probably no more than $60 for two entrees. I already have Fort Wilderness breakfast (yum...), Sanaa, and Kona Cafe on the list.
Also, let me know if your suggestion would require booking right at 6 months!
 
I know this is a WDW site and I obviously ADORE all things WDW, but if you want to be close, but not too much, I'd recommend the Hyatt Regency Grand Cypress - all the rooms over 20 years (when I was in college!) that I've stayed there, have had a view of DS. Its a fantastic relaxing property and a quick/cheap/easy DS Uber. Wolfgang Puck (not express) might be a nice, not overwrought, dinner. Il Mulino at the Swan is lovely, very accessible Italian and then you could walk around the Boardwalk, the portions are nuts there!
 
Take a look at the menus at the DS restaurants. Homecomin', Raglan Road may be good options. We enjoy Wolfgang Puck Express in the Marketplace yes it is counter service but the portions are a good size and they bring the food to your table. The Puck restaurant in the Westside is closing this Summer and a new restaurant will be openning in another location in DS next year but no openning date yet.
 
Trattoria al Forno at the Boardwalk is great
Also, Ohana (that's more than $60) & same with Hoop dee doo, but it's so fun & worth it :)
Homecoming at Disney Springs is excellent! Best fried chicken!
