Omigosh! The possibilities
MK: Lighthouse Sandwich at Columbia Harbor House
Epcot: Udon at Yakitori House (you knew I was going to say that, didn't you?)
AKL Mara: African Stew and usually at least one of the soups on offer at Boma; falafel pita
Any given value resort foodcourt: pasta alfredo with chicken
I second the Lighthouse Sandwich at CHH. I just tried it for the first time this past summer and it is really good and a really good choice for a vegetarian meal. My family eats a lot of chicken and this is just a nice change and I love the bread it is served on. I always ate the chicken fingers there and felt totally guilty afterwards because they are not the most healthiest. I don't even miss the chicken fingers and this sandwich is very satisfying and tasty.
