Could we do all this in one day, end of May?

We'll be going to WDW at the end of May, and thinking about taking a day (possibly two, if we really need to) for US/IOA. We've never been, and the kids are old enough now that I think they'll enjoy some of it, plus my daughters are huge HP fans and of course want to see that part of the park. We will not have FOTL access, and this will be on a weekday (or two).

Here's what we'd want to do; can we manage all this in one day, or should I plan for two days?

Harry Potter land--kids will want to ride Flight of the Hippogriff; Honeydukes and Zonkos; walk through Hogwarts castle (can we walk through even if none of us will do the ride?)

Dr. Suess land--all the rides, and the kids play area

Poseidan's Fury show

E.T. ride

Jaws ride

Jimmy Neutron's nicktoon blast

Men in Black

Shrek 4-D

possibly Simpson's ride

Woodywoodpecker coaster

maybe Diasaster (too intense for kids?)

Animal actors on location

Curious George playground

So--possible to do in a day, or should I plan on two?
 
You should on two days especially around Memorial Day weekend...it's just too busy to try and rush through everything. Since this will be your first time, you should explore and not rush.
 
I would say to plan for two days too.

You might also want to explore the 'Toon area too. It's a fun place for kids since there are quite a few water features and there is also Me Ship, the Olive where you can shoot water cannons at people in the Bilge Rat Barges. The kids might enjoy going into the Discovery Center in Jurassic Park too.

Disaster isn't too intense as long as the kids understand that it's all make-believe. The earthquake effects when you're in the subway are pretty cool and you may get spritzed with a little water.

There are also characters around in both parks if your kids are still into those. I love the Cat in the Hat and I haven't been a kid for a very long time. ;)
