Cottage Bacon?

Bought some cottage bacon today from our local farm store.

Has anyone had this before? Do I just cook it like regular bacon?
 
Yes, I cook it just like regular bacon. It's a lot meatier. We always get some when we buy 1/2 a hog in lieu of the pork steaks, so it's pretty meaty. Just as delicious, though! I also use it like ham, chopped fine in omelets, etc.

If by regular bacon you are referring to the Pork Belly type (United States) then no. It fries up more like ham.
If by regular bacon you are referring to back bacon (Canada) it fries up similar. But because it's not as lean you don't have to be so delicate with it.

Note that cottage bacon comes from the shoulder rather than the belly or the back.

The big advantage of cottage bacon over back bacon is you don't have to use a nice cut of the pig (loin) for bacon. The drawback is the fat content is a bit higher, but not nearly as high as the bacon from pork belly that we use in the states.
