Corn Bread - Where to Find It

HI there - I know this may not be a big deal for some but the only time we can get corn bread is when we are at WDW. And we abolutely love it. Other than Whispering Canyon and Artist Pointe what other restaurants have it?

I ate some at Chef Mickey's last month. Probably wasn't as good as the restaurants at WL, but still, it was there...

How did you get it at Artist Point? When I went in Jan, the "starter" bread was a dense wheaty sourdough (sooooooooooooooo good), or does the corn bread come with a meal?

The restaraunts that come to mind are: Whispering Canyon, Hoop de Doo, Trail's End at Ft Wilderness, House of Blues, and Boatwrights.

Maybe it's because I'm southern and corn bread is such a part of our diet down here, but I'm confused as to why you can't get it up north. Cornbread is one of the easiest things in the world to make. If you're interested here's a recipe:

2/3 c softened margarine
1 c sugar
3 eggs beaten
1 2/3 cup milk or buttermilk
2 1/3 c flour
1 c corn meal
4 1/2 tsp baking powder
1 tsp salt
Mix margarine and sugar. Sift dry ingredients together. Mix eggs and milk and add together with dry ingredients. Bake in a greased 9'X13" pan at 400 degrees for about 25 minutes or until browned. You can also make it in greased muffin tins and cook for about 20 minutes. As soon as you take it out of the oven, rub the top with more butter. Serve hot with butter.

To make Mexican cornbread use the same recipe but add a can of cream corn, 4 oz can chopped green chilies, 1 c shredded Monterrey Jack jalapeno cheese, and about 1 lb of browned ground beef that has been drained really well. Mexican cornbread has a tendency to stick, so grease your pan really well and you may also want to coat it with just a bit of dry cornmeal before pouring your batter in. You may also want to let it cook just a tad longer.

I agree and there's a good recipe out there (maybe even on this site) from HDR that has kernel corn in it. I used to make it using a recipe from my "A Taste of Florida" cookbook. Take home a nice bag of cornmeal and make it for your friends.

It was two years ago that we were at Artist Point - I thought corn bread was a part of the bread that was given as a starter. But I could be wrong.

Corn bread is not a part of our diet up here at all. I don't think I've ever even seen at on a menu where I live. That is why we so look forward to it when we go to Disney.

Here in upstate ny you can find it all over! Do you have a Smokey Bones restaurant near where you live? It's a BBQ chain restaurant and they have the best corn bread I've ever had in my life! It's served with pecan butter and it's divine!
 
My mom makes cornbread, but she calls it "Johnny Cake." Hers has always had a little bit more sugar in it, so it's a little sweet instead of savory. The only comparison I can make is to Cracker Barrel restaurant. Their cornbread is definitely not sweet. I don't love it, but maybe others out there think Cracker Barrel's cornbread is the cat's meow.

My mom's cornbread never has a piece left over. The above recipe calls for 1 Cup of sugar, and that's a lot, but if it is not sweet enough for you, just add a little more sugar, to your taste.

the secret to moist cornbread is the buttermilk!!!! It makes it taste much richer than using regular cow's milk!
