Coral Reef Custom Menu and Diver

I read somewhere that it is possible to have a diver hold up a sign anouncing a special occassion while dining at the corla reef. I also read that it was possible to get a special customized menu. My DW and I will be dining there on our anniversary, and I would love to surprise her. Anyone know how to go about making this happen?
