Cookie Swap in 5 hours---help!!!!

I forgot about our neighborhood cookie swap! I know, how does THAT happen? We have a very full plate this year--my FIL has a very aggressive from esophageal cancer (we just found out...) and our kids don't yet know. We're trying to keep Christmas "normal" despite all the trips out-of-state.

So, without getting into the depressing stuff, I forgot about the cookie swap which is DIRECTLY ACROSS THE STREET from my house--so close we can see in each other's windows!! So, I can't really tell any white lies and don't have the energy to either.

So...does anyone out there have an easy cookie recipe that I can use for this cookie swap? I can't use chocolate chip cookies--there aren't any other rules as far as I know. The cookies need to be ready by 3:30 est TODAY...

Am I able to pull this off?

Thanks, as always, my stranger-DIS friends... As I began to panic this morning, my mind went straight to the DIS!
 
No Bakes

Melt together one stick butter or oleo and 1/2 c whole milk
add 2 cups sugar and 4 T cocoa
Bring to a boil
boil 1 minute
remove from heat and add 3 c oatmeal and 1/2 c peanut putter and 1 t vanilla.

Drop on wax paper

Good luck.
 
Do you have any Brownie Mix in your house? If so, you could make Brownie Cookies. Take a box of brownie mix and add 1/4 cup flour, 1/4 cup oil, 3 TBSP water and 2 eggs. Mix all together and add in approx. 1 cup chocolate chips or whatever flavor chips you like (I used mint the other day and they were yummy.) Bake at 375 on lightly greased cookie sheets or 12-15 min. Let stand2-3 min on cookie sheets before removing.

There are also cookies you can make from cake mix but I don't have those recipes!
 
I second the no bake cookies... these are the first thing that came to mind when I read the thread title.

And I'm sure you CAN do it...but ya know...you don't have to. Can't you just be honest with your neighbor about your dad, tell her it slipped your mind due to all the stress and that you're very sorry you didn't get any cookies baked? If my friend/neighbor told me that I'd want to do anything I could to help her (including baking cookies for her today and telling her to come anyway, no one would have to know she didn't bake her own contribution!) and certainly I'd keep her confidence and not let on to her children.

Run to the store and get a bag of those square Ghiradelli mints, they are flat and square, individually wrapped. Bake a pan of brownies and stick one of those mints on top of each brownie while the brownies are warm. They look great and taste yummy. How many cookies are you to bring?

Here's a recipe for "Quick Chocolate Cookies" using cake mix. Beat together 1 egg, 2 TBSP water, 1/4 cup oil. Add 1 box chocolate or devils food cake mix. mix well. Form into balls, size of walnut. Dip (roll) in sugar and place on cookie sheet. Bake in 350 degree over for 10 minutes. Makes 3 dozen.

Hey I'd go w/ rice crispy treats. Get some colored sugar to make them festive. ten minutes top to make. Hey they aren't fancy but who doesn't love them???
 
Here's a couple I love to make cause their pretty easy yet delicious!

Chocolate Chip Shortbread Cookie Logs

INGREDIENTS:
1 cup butter, softened
1/2 cup sifted confectioners'
sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
2 cups miniature semisweet chocolate chips
1 tablespoon shortening
3/4 cup finely chopped walnuts (optional)

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
2. Cream together butter and confectioners' sugar until smooth. Stir in vanilla. Mix in the flour, and then one cup of the chocolate chips. Shape dough into 2x1/2 inch logs. Place logs 2 inches apart on prepared cookie sheets.
3. Bake for 10 to 13 minutes in preheated oven, or until firm. Let cookies cool completely before removing from pan (shortbread is brittle).
4. Melt the remaining 1 cup chocolate chips and shortening over a double boiler, stirring frequently until smooth. Dip one end of each cookie into the chocolate, then into the nuts (optional). Place onto waxed paper until set.

Big Soft Ginger Cookies

INGREDIENTS:
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt 3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

Quick DEEElicious Marble Chocolate Chip Cookies.

Get a box of Duncan Hines chocolate chip cookie mix. Make the mix and separate it in half into two different bowls.

Melt one square of unsweetened chocolate in the microwave. Pour into one half of the mix.

Use a ice cream scoop and pick up half of the regular cookie mix and half of the chocolate mix and place on a cookie sheet.

Bake for EIGHT minutes. They do not look done when they come out, they cook AFTER they come out so this allows them to remain soft.

I bake these every year for friends, coworkers and relatives and am not allowed to show up without them!! :thumbsup2

Very easy.................

Buy the Pillsbury premade pie crusts, cut into small triangles. Fill with apricot jam and small pieces of walnuts, fold the tip of the triangle to the meet at the bottom center of the cookie. Bake for about 10 min on 350. When cooled down, dust with confectionary sugar. :thumbsup2
 
Why not make Rice Krispie Treats? I always make these for cookie swaps and they are a huge hit because nobody ever thinks to make them! You can also use red or green food coloring or holiday color sprinkles in them to make them festive.

Why not make Rice Krispie Treats? I always make these for cookie swaps and they are a huge hit because nobody ever thinks to make them! You can also use red or green food coloring or holiday color sprinkles in them to make them festive.

If you are lucky you can find the Christmas Rice Krispies - thye are already red and green
 
Here's my favorite and it's easy to do.
Melt 1 package chocolate bark
Add 1 tsp (or more if you like) peppermint extract
Dip in a ritz cracker
Dry on wax paper.

You can make it fancy by sprinkling with colored sugar or crushed peppermints, but these taste just like the Girl Scout Thin Mints.
 
Easiest, best, most complimented cookies I've ever made...

Make peanut butter cookies from a roll of Pillsbury Peatnut Butter Cookies.

As soon as you pull them from the oven, place a miniature Reeses PB Cup in the middle of each cookie. Let them sit for a couple of minutes then swirl the choc. on the top to get rid of the "crown" part of the cup. This makes them look homemade.

Put the cookie on a cooling rack and you're set.

I think I'm going to make some today...mmmmm

these no bakes are awesome. I was reading here less then 15 minutes ago (no kidding) and hopped up to try them out. they are done and oh so good!

and just so you all know. I melted and boiled in the microwave in a glass bowl, same results. little easier clean up. love the wax paper too as it also saves the tray clean up.

here's a similar ingredient recipe that is no bake that always gets rave reviews around here.

Original name Special K bars. My name peanut butter maple bars.

1 cup white sugar
1 cup peanut butter (reg/chunky/whatever you have)
1cup syrup (recipe used to call for Kero, never use it, always use whatever breakfast syrup is on hand)

melt all three together in micro until bubbly (long enough to melt granualted sugar)

Stir in 6 cups no name brand corn flakes (recipe called for Special K of course)

spread in 13x9 while hot and cover with 1 12 oz bag choc pieces (or however many are left in bag in whatever flavor you like I've used mint, white, caramel, milk, dark, etc!)

Cover with foil so chips will melt. (maybe 15-20 min? I usually forget them!) and then come back and spread melted chips to coat top of bar.

cool and cut into 1 inch by `1 inch sqaures. they are very rich. this is a huge amount of squares!

Thank you all for your great ideas. Some kind soul sent me the quick and easy Christmas treats link and I went to town. I ended up making Oreo Truffles which, believe it or not, were a huge hit!!

All I did was put two packages of Oreos in the food processor (1 pge at a time) and pulverize them until there was nothing but fine crumbs. Then I put the crumbs in the mixer and added 2 blocks of cream cheese. Mixed it up until dough-like. I rolled them into 1 inch balls, rolled the balls in confectioner sugar and I was done!!! The original recipe calls for dipping in melted chocolate, but I didn't have the time for that!!

Super easy and pretty delicious!
