Cooked a Big Ham--now need leftover ideas/recipes

I finally took the plunge and to stick to my idea of stretching meals and using leftovers I bought and cooked a 8lb ham and have 3/4 of it left. Now I need ideas on what to do with the leftovers. I figured scallop pot. and ham, ham slices, I want to do ham and bean soup but I don't have a recipe for it. Any other ideas? Thanks:goodvibes
 
I like to grill or fry leftover ham with a bit of teriyaki sauce and pineapple.
Also you don't need a recipe for ham and beans; just pick up the multi-blend bags of dried beans and toss them in the crock pot with the ham ends, some water and a bit of apple cider or sprite and a chopped onion (and Pickapeppa sauce if they sell it in your area...) and let it cook all day.
 
:thumbsup2I like to make crock pot hash brown casserole, then add ham to it... SOOOOOOOOOO good...I actually think we like this better than the original ham...
 
Spaghetti & Ham Casserole, our favorite leftover meal.

Cook your spaghetti, take a 9x13 pan (spray with pam) put a layer of cooked spaghetti, than ham slices or chunks, than lay about 6 american cheese slices over top. Season w/ parsley & garlic powder. Repeat again with spag.,ham and cheese.
Your pan should be full now. Pour milk into dish until it comes about 1/2 from top bake in oven at 350 for about 45min or until milk is bubbly and cheese on top is slightly browned. Will make it's own sauce so you want to make sure you don't bake too long. Eat w/ parmesean cheese on top, very easy and very yummy.
 

Ham and cheese soup from the Pampered Chef cookbook. I add broccoli and diced potatoes in ours and it's YUMMY.
 
Ham and Potato Hash

3 Tbs butter
2 medium potatoes, peeled, cooked, diced
1 small onion, finely chopped
½ green bell pepper, finely chopped
1 cup finely diced cooked ham
Salt and pepper to taste

Melt butter in large skillet over medium heat. Add remaining ingredients, mix well. Cook until well browned, stirring frequently. Serves 6.

I would like some scrambled eggs in this, if I have the occasion to make it again.
 
I make a basic white sauce, add a bag of frozen mixed vegetables to it and some diced ham. Heat and serve over puff pastry shells.
 
Scrambled eggs, sauteed vegetables (red pepper, onion...) ham and cheese.

Bag of rice and beans. (Black beans or red beans.) Add the ham. (There are a number of different brands of rice and beans. If you don't like one, give another one a try.)

Split pea soup. Add the ham.

There is a bag of already mixed dried beans for ham and bean soup. (It's a number. I can't remember, maybe "14 Bean Soup?") Look in the dried beans section in your grocery store. You will need to cook this all day as the dried beans take awhile to get soft.

Ham freezes very well. Just wrap a "dinner sized portion" (sliced or not sliced doesn't matter) in plastic wrap. Then put this into a zip lock bag. Label "cooked ham." It takes about 4 hours to thaw on the counter and you can add it to your dinner.

Quiche. Google the exact amounts of egg and milk. Buy the Pillsbury pie crust. Fit it into the pie plate. Pre-bake the empty shell. Dump in the egg mixture, ham pieces and anything you want to add (cheese, sauteed vegetables...). Bake. Kids love quiche.
 
I agree to freeze some of it.

I like to make Jamaican Red Bean Soup (the original recipe came from Carnival).

Small Red Beans (not! Kidney Beans)
Ham including bone, if available (as much as you like)
Salt
Onion, minced or fresh chopped
Basil
Garlic powder
Carrots, diced-1 cup (ish)
Potatoes, diced-1 cup (ish)
Tomato sauce, 1 small can

Soak beans the night before overnight. Cook beans with ham & bones, salt, onion, basil & garlic until tender. Remove bone(s) and return any pieces of meat from bones to beans. Add carrots, potatoes and tomato sauce. Cook until veggies are tender. Re-season, if necessary.

YUM! We love hasbrown casserole but I've never made it in the crockpot! Got a recipe?
 
here is our favorite, in fact, I think we will have it tomorrow night.

Ham and Noodle Casserole

6 cups water
4 cups Uncooked Eggs Noodles (I have also used macaroni)
1 Onion, chopped about 1/2 cup
1/2 cup sour cream
10.75 ounce can Cream Chicken Soup
2 cups diced cooked ham
2 cups shredded Swiss Cheese
salt and pepper to taste
1/4 cup dry bread crumbs

Preheat oven to 350. Grease a 2 quart casserole.

Bring water to a full rolling boil in a pot. Cook the noodles in the boiling water. Cook til tender and drain.

Cook diced onion in small amount of butter just to soften.

Stir the noodles, onion, sour cream, soup, ham and Swiss Cheese together in a large bowl. Season with salt and pepper to taste. Spoon into the prepared casserole. Sprinkle top with bread crumbs.

Bake until the casserole is bubbling and the bread crumbs have browned. About 40 minutes. Serve with a salad and garlic bread........YUM!!!
 
Make sure to soak the dried beans overnight. In the morning drain off that water. Put the beans back into the pot and add fresh water and the ham. Bring to a boil then turn down to simmer and cook all day. Cornbread as a side in our home!

Also, peel and dice potatoes, put into a pot with 2-3 cans of green beans (with the liquid) and the ham chunks. Bring to just boiling then turn down to simmer and cook at least an hour. Great one pot meal.

Fried rice. An addition to mac and cheese. Ham biscuits. Quiche. Minced ham and scrambled eggs. Ham and some type of dried beans or peas, can't beat it. Also, as a PP said, freeze in meal size portions. It is amazing how creative you can be when you only have a little to work w/ vs. 3/4 of a whole ham. It changes from something to get rid of to a gold mine.
 
When we cook a ham, we always make hot ham and swiss criossant sandwiches!
 
Cheese Tortellini with chopped Ham, peas,tossed with Alfredo Sauce. Sprinkle with fresh ground pepper and some Parmesan cheese. A family favorite at our house.

Oh, you just made me remember :goodvibes Duke's sandwich shops. I used to live in Greenville, SC and these shops had the best Ham sandwich--Baked ham, pepper and onion. Same principle as you suggested with chopped green pepper and chopped onions added instead of pickle etc. YUMMY!
