Converting ADRs from OOP to DDP?

If I make my reservations as OOP, will I be able to convert them to DDP? We are still trying to decide if DDP makes sense for us, but our 180-day window is coming up soon. I'm particularly interested in the ones you have to pay deposit in full up front like CRT.
 
Your reservation is really independent of how you pay. If the CM asks if you are on the DDP they may make a notation on the reservation for informational purposes (similar to requesting a high chair, or noting a birthday, or food allergies). It doesn't really matter when you make a reservation whether you ultimately pay OOP or use the DDP. I had no problem on my recent trip using the DxDDP paying partially using the DP and partially OOP when we had non DDP members in our party, or when we ordered alcohol and other items not on the DDP. You don't really have to make any changes if you don't want to bother. Just tell your server how you will pay when they first come to your table.
 
While I did not do CRT, we did do HDDR and the California Grill. In both of my cases, the credit card wasn't charged, probably just a hold placed if I no-showed. In the case of California Grill, just payed using the DxDDP like other restaurants. In the case of HDDR, I went to the hotel concierge, and used DxDDP credits to "pay" for a portion of my party and OOP for another portion. The actually credit card wasn't billed until that moment at the concierge. I then got a "receipt ticket" which was an admission for a party of 5.

I called and asked about this because I wondered too. We have the deluxe dining plan and were thinking of stepping down to the basic dining. So I called and asked the CM if it would make any difference or change to our ADR's if we changed our dining plan later and he said No. His only advice was to make the decision before you paid your package off.

Also on our last trip we were on the basic dining plan and when I booked the ADR's I was asked if I was on the dining plan and I said yes. We ate at more table service restaurants than we had credits for. So we just told them when they came to take our order ( if they didn't ask) that we would be paying out of pocket even though we had the dining plan. We never had a problem with any of them.

I booked CRT this trip and was told that my credit card would only be charged if we didn't show up or cancel in 48 hours. I hope that she was right about that.
