I have a GE convection oven and I LOVE it. It does a great job with baking but it does an even better job when I am cooking a Turkey or some sort of roast. The oven does not dry out the meat and it really does a great job of browning the outside of what ever type of roast I am cooking. It also probably cuts the cooking time down by about 1/4. My convection oven also came with a thermometer that you plug inside of the oven and then insert into the meat, you can then see the temp on the digital screen outside the oven.
The way I operate the oven is very easy, the buttons on the front of the oven say "convection bake", "convection roast" or "bake", and I just select however I want the oven to operate, by pressing the button. My sister just moved into a house and it has a convection microwave and I have no idea how to operate that.
My convection oven was only $100 more than a standard oven of the same model. A convection oven needs a 220 volt line for the oven itself and mine is a gas range so I needed a gas line. Originally my home did not have gas and when we updated the house, I kept the electric line and added the gas. The salesman told me that convection ovens were not popular in my area, because most people only had gas in their kitchens, and adding a 220 can be expensive.
