Considering ADR change(s)- Please help!

Hi. I have all my ADRs booked for our upcoming Sept/Oct trip. Of course, I am now second guessing myself and thinking of making some changes. Current ADRs are:

9/27 (MK): 11:45 lunch at Crystal Palace
9/28 (EC): 4:30 dinner at Le Cellier
9/29 (DS): 12:10 lunch Sci-Fi/ 6:00 FDP at H&V
9/30 (AK): 11:45 lunch at RFC
10/1 (MK): 12:00 lunch at Plaza/ 5:55 dinner at LTT
10/2 (?): No ADRs*

*I was planning on leaving our last day's park up to the kids (we have to be leave the park by 3:00 to travel home), so didn't book any ADRs.
Now I am reconsidering. I am pretty sure we will want to go back to EC, as we will only have one morning there for FW and about 3 hours in the evening for WS on the 28th. Also, we will be out late the night before for Spectro (8) and Wishes (9). I am now considering having a late breakfast our last day at Cape May, then walking to the International gateway for a few hours of WS before heading back to the hotel. Alternately, I am considering Coral Reef for lunch and a few hours in FW. In that scenario, I would probably change one of my other lunches to a dinner (most likely CP, which I'm considering regardless). Now I have to decide which ADR to cancel. The choices are:

H&V dinner (I only booked it for the FDP, many people think it won't be necessary)
Plaza lunch (it sounds good and I had an extra ADR)
LTT dinner (we will be returning to MK after an afternoon break, having dinner and than catching Spectro and Wishes- would a CS make just as much sense?)

The only advice I can give you is, don't cancel/change Le Cellier. I was going to make a second reservation (during your time frame) and it is booked solid for dinner everyday I've tried.

Thanks, I definitely am not cancelling Le Cellier! It is one of my "must-dos", along with Sci-Fi, RFC (I have $75 in GCs), and CP (although I am leaning toward changing it to an early dinner if I can). Otherwise, I don't really care which one goes. I have never eaten at any of them, that's why I was hoping for some opinions.

We did the H & V Fantasmic dinner in April and it was, by far, the worst meal of our trip. It was actually the ONLY meal all week we didn't like. We did not like the buffet choices, it was crowded, loud and dirty. We will not go back there for any reason.
I would change this reservation.

I'd cancel Rainhforest in a heartbeat, but the others look good.
