We ended up staying concierge at the WL and the Polynesian, and now in 3 weeks we'll be back at the Polynesian concierge again. I guess we're hooked now too!

To try and answer the OP's question, there are some things that staying concierge provided us, which we couldn't have provided for ourselves. First of all, we really appreciated having access to the concierge lounge for the entire check-out day. In the late afternoon while waiting for our limo to pick us up we had a place to relax in, DSs played cards, we all had drinks and snacks, and our carryons were stored right by the desks for us.
Also, I had asked concierge to have the gold Mickey ears with our names embroidered on them waiting in our room for us, and they were able to do this with no problem.
The best part of all happened at dinner on our anniversary. I had ordered a small "wedding" cake as a surprise to my DH. These cakes are made at the Grand Floridian bakery, and they don't deliver. I asked concierge (Polynesian), if they'd be able to have someone pick the cake up for us at the GF, and then arrange to have it brought out after dinner, the night we dined at 'Ohana. If I would've had to go pick the cake up myself, my DH obviously would've wondered where They handled this perfectly for me, and DH was quite surprised to see the cake heading our way. As far as booking dining reservations, I like to do that myself, so I haven't had concierge do much of that for me. I also booked my own Around the World at Epcot Segway tour.
Oh, and another benefit of staying concierge is often they're able to get you into a fully booked restaurant on the same night
