We've stayed concierg only one time at the Poly (Just got back on the 13th). Let me see if I can give it to you straight. I am not "sold" on concierge even after experiencing it once. I am keeping an open mind though!
1. You get special pre-trip assistance with your planning. ie. priority seatings, recommendations, they'll shop for you to have surprizes in your room upon arrival, etc.
2. If the staff is good, they will have great ideas for neat things to when they call and get an idea from you on what types of things you like to do.
3. You get food offerings. From what I hear this varies from resort to resort. And some of the resort even have different levels of concierge. At the Poly they offered a nice continental breafast. Sodas, juice and bottled water out all day. afternoon minimal snacks. heavy horse doovies in the evening with beer and wine. night time night caps with nice desserts.
4. They are supposed to cater to your every whim. You have to be willing to ASK for things. (I didn't ask for any assistance once we got there)
5. I don't think there is a difference in the quality or size of the rooms except the suits.
There is a thread that is devoted to concierge experts. They are all very nice people and they know the services offered at each resort. If you have specific questions about a particular resort's concierge services, I'd ask it there.
We found that if we ate a good lunch in the parks and breakfast in the lounge we didn't need dinner. But eating is part of the fun at WDW.
We are going to stay concierge again at AKL because I want to do the safari and that's the only way you can do it. (at an additional cost) It's real expensive so staying concierge is a big decision that you need decide if you want to try it. You can always split your stay. Stay a few nights standard and a few nights concierge and see what you like better!
Just have fun
