Am I right in understanding that if you are staying concierge, you can debark the ship at any time if you are doing express walk off? It would be fantastic if my family and I could debark the ship around 8-8:30AM, but I'm not sure if this is an allowed move or not. I'm on the Fantasy if that makes a difference.

I can't give you a definite answer about debarking times. A lot depends on when the ship clears customs.

Our last cruise was delayed getting back into port b/c of a medical emergency. Any thing can happen to cause a delay. And because of our last experience I will not book any flights before the recommended times.

That's fantastic, waggles! I didn't know about this perk the last time I sailed concierge, and I walked my own luggage off at 7:15-7:30ish as per the Navigator. If concierge could walk us out at a later time, that would be amazing! I just wasn't sure if that was allowable or not. I know concierge walks off guests at their leisure, but wasn't sure if that was for everyone, or for non-express walk off people only.

If concierge walks you off that early, do you have an opportunity to get breakfast first? We've sailed other cruise lines but not Disney before so we feel like complete newbies

The concierge lounge has breakfast foods available and guests are escorted down in groups. This will not offer the hot foods, but there are plenty of fruits, cereals, Danish, yogurts, etc., available.
