I've just been told for a min of 2-3 weeks I need to go grain free. Gfree and the rest like potato quinoa etc. no dairy or corn either.
Something about nut flours being ok

I've ordered some cook books on amazon.
It appears I'm suppose to do meat veggies and fruit

I'm suppose to heal the upper portion of my intestines.

Anyone else in a similar boat. There are already very few things I can eat as it is. Citrus and tomato cause problems too

I'm just extremely frustrated.

I can't imagine that you can make bread or pasta without grains.

Cauliflower makes a good rice or mashed potato substitute thought. I shred some and cook it like fried rice, or use it as a bed for food with gravy. It also looks like a comfort food because it's white.

I've seen pasta made from cauliflower, there's a new kind of Kraft Dinner in Canada that uses it, but I haven't seen it other than that.

Can you eat squash? Spaghetti squash is a very easy to digest alternative to pasta.

I would take a look at the Specific Carbohydrate Diet. I suspect it's the exactly type of thing you're looking for. SCD websites will also have lots of recipes for preparing foods that meet the 100% grain free requirements. To start, the "official" book on the subject including science behind it and step by step guide to starting the diet as well as lists of "safe" foods is Breaking the Vicious Cycle by Elaine Gottschall.
