Y'know, in a whole bunch of WDW trips, we've NEVER had a TS meal that was "awful, we'll never go back there again." Bongo's was just OK, and our one visit to Big River Grill the food was pretty good, but the place itself was nasty. Still, I could go back to either one.
As far as those that are generally bashed ... 'Ohana seems to be one of those love/hate restaurants, and we go just about every trip. We've been to H&V twice in the last five years, and it just wasn't bad. It's not one I necassarily crave, however. We've never had a bad experience at Coral Reef, either, although portions sure have gotten skimpy.
I think it helps to always remember that, when in the parks, you're eating theme park food, so I adjust my expectations accordingly ... hold WDW up alongside Six Flags, and there is frankly no comparison. I do hold the resort restaurants, and the signatures, to a higher standard. Buying a small box of popcorn at the movies for $4 makes Disney feel like a bargain, too.
