Commercial dishwashers.

We have a big kitchen at our church. I help out at church dinners and teas and have finally done dishes by myself using the dishwasher.

Why do the commercial ones take a few minutes to clean the dishes and my home one takes a couple hours? What gives?
 
My home machine does a load in 25 minutes -- I think you need a new dishwasher :)

Seriously, a Hobart uses REALLY high pressure nozzles and water that is so hot that it is essentially steam (or cooler water plus chemicals). It's a very high volume of water (45 gallons per minute in a light-duty Hobart). Most home plumbing cannot handle that much pressure. For this reason, commercial dishwashers also have to be plumbed directly into the drainage lines with an air gap; no indirect side-line drainage such as you could use in a house.

Also, they don't dry at all. The only reason that dishes seem dry coming out of a Hobart is if they are so hot that the water just evaporates.
