Collard Greens?

Hello Disboarders,

Happy New Year!!!! I am spending a quiet night at home tonight with my family and went out to get some movies. While i was there I got some fresh collard greens but Ive never fixed them. Does anybody here do there own? If so how do ya'll fix them? Thanks so much. Hope you have a prosperious blessed new year.
 
Washed the collard greens and throw hamhock in them let cook 5 hours. Make sure put salt and black pepper in them.

another way is cooked collard greens in bacon fat or through couple strips bacon in the greens and serve with corn bread and hot sauce. I am sorry the Southern is coming out of me.

Greens are delicious and easy to fix. the great thing about them is you can spice them up any way you want.

So first simple rinse and cut greens up.
Now the key is to let them boil/steam until the become tender with some sort of meat to flavor.

Next, I fill a pot with about 1/3 water. for about 2lbs greens I had about 1/4 cup vinger maybe less. vinger wil help tenderize them, supposedly winter greens tend to be a bit tougher. I also add old bay seasoning and red peppers (I like my greens a bit spicey). Now you need some type of meat to flavor. you can use pork neckbones, pork knucklers or you can use turkey wings. I've used bacon grease in a pinch.

Put all in the pot and let cook until tender on low to mediium heat. I let mine go for hours. 5-6 easy Occasionally stir and taste.
 
The first thing you will need to do it make sure you wash them WELL! Sand/dirt can hide in the leaves and there's nothing worse than to be crunching on it when you are eating! I kinda roll the leaves and thinly slice them, but you can cut them/tear them any way you want. I add them to a pot with a little water (you can also steam them with beef broth or veggie broth), and put the lid on to steam them until they are nice and soft. I usually make them with no meat so when they are done I drain the water add in some olive oil, salt, pepper and some spices (garlic, onion). You can also add in some chopped onion, that's good too. If you want you can put in some cooked bacon, that's always good:thumbsup2.

Filll a sink with water and add the greens. Change the water several times. I do at least 3. Pull the leafs off the stems. I also break them apart to make the pieces more managable. You can add ham hocks but I made them without this last time and added about 1/4 c. vinegar to them. They boil until tender.
 
Wash thoroughly, which means changing the sink water a few times. I use both sides with the second side a rinse. Cut out the center stem and any bad spots and slice them into approximately two-inch pieces. In the meantime, fry about a half slice of country ham. Then saute about a 1/4 of finely chopped onion with it. The ham won't make much fat, so add a little water. Add collards and water. If there's too much at the beginning, just add fresh ones as what's in the pot cooks down. Sprinkle with salt, red pepper and a spoonful of sugar. Cook until tender. Serve with black-eyed peas and fresh cornbread.

If you don't have country ham, substitute bacon. Make them meatless by using vegetable or olive oil.

Collards are strong. The sugar is an important ingredient. :)

This had been my experience...but we still made them and had a bite on NY day for good luck! This year I read to add brown sugar to the onion and bacon...they were fantastic!
 
Google Alton Brown's collard recipe. I use bacon instead of the smoked turkey legs his recipe calls for, but my family says my collards taste like my grandmothers and beg for them at Thanksgiving.

I have found that cooking the collards according to AB's recipe and then transferring them to a crockpot on low for several hours makes them very tender and tasty.
 
I never liked greens because the home-cooked kind are so...wet. Eww, I loathe wet food. But then I discovered frozen mustard greens. :thumbsup2

Saute a big onion, and whatever kind of meat flavouring you like (I like diced Canadian bacon, so sue me). While that's going, drain a box of thawed greens and squeeze until almost dry. Then throw it into the pan and mix with a good splash of cider vinegar and cayenne pepper. The advantage of the frozen stuff is that it doesn't really need to be cooked at all; just heated.

If you want to make the hillbilly triumvirate complete, drain and rinse a can of black-eyed peas and toss it into the pan with a bit of brown sugar and more cayenne to taste.

Then serve the whole thing over cornbread.

As always, YMMV. Some folks actually like pot likker *shudder*.:sick:
 
I love collard greens!

We make a recipe where we cook up a couple of cups of brown rice, and mix that in with collar greens, and let them steam til they're wilty, then you scramble up a couple of eggs in it, and season with a little red pepper, garlic, and salt. Sounds weird, but it's SO GOOD. It's total comfort food for me.

I completely agree! Generally speaking I am a vegetable lover but I can not eat greens no matter how they are prepared. They make me gag. Blech!
