Recently, I've been very strict with what I eat, I'm trying to eat as clean as possible. When I say "clean" I mean no MSG, or preservatives. Anyway, we were at Disneyland the other day, and ended up staying later than expected. I ran out of food, and ordered a hamburger from one of the restaurants thinking how bad could it be. After not eating MSG or other additives for a while, the burger actually made me ill. Am I going to have trouble finding options on the ship?

Well, unless you list your dietary restrictions on your reservation, you'll probably have a issue.

I think the lighter fare options in the MDR are supposed to be fairly bland

This. "Allergic to MSG" might be able to be accommodated WITH NOTICE. "No preservatives"? You'll probably be directed to the salads to be honest.

I don't know what ship you're going to be on, but Daisy's D-lites (however that's spelled) on the Wonder had fresh fruit as well as build-your-own bowl options with a lot of fresh ingredients. So that's one option on deck. I'm with the others, not sure how they'll deal with the no preservatives part. I can imagine that will confuse some servers.

Yes. Allergies are health issues with a degree of culpability if they make you ill. Fad diets, you're on your own.

You won't be able to eat completely clean. Bring some medicine with you for whatever you need - pepto bismol, etc. I don't think the wait staff will have any idea what you are talking about if you ask them for help. You can probably ask for things to be cooked without any seasoning or just salt and black pepper. My husband usually has good results asking for just salt and black pepper on the meat and then he omits the sauces.

Beef in general is really hard to go back to after you have been eating clean-as it is generally not allowed. Steer towards fish & chicken - no sauce and you should be way better off.

Without knowing for sure what it was that made you ill the first time you can't really say if you'll have a problem on DCL.

What I will say is that for each meal you have the options for lean meats and vegetables. Should you want something like "light seasoning" or "no butter" ex, those requests can always be made at the time of the meal.
