I'm looking at various dining menus and options to decide if the dining plan is right for our summer trip. At some of the restaurants, the soups or salads seem more appealing than the entree and those are not included at all in the dining plan, correct?

An entree-sized salad counts as a dining plan entree. So would an entree-sized soup, if such a thing actually exists.

Subbing an appetizer of any type for your entree would seem like a good deal for the restaurant, but reports indicate that this is a hit-or-miss proposition that depends on the specific location/server/date/whatever.

If you and your family prefer eating light, the dining plan is probably a waste of money. Now, if you are getting the DP for free, I believe there are some places where a salad is an entree. Also, the buffets always have killer salad bars, you could go that route.

1 -- You may or may not be allowed to substitute the salad/soup for an entree on the DDP. (the deluxe plan includes an appetizer, which would allow you to order the soup/salad).
2 -- Even if you were allowed to make the substitution, it would turn the meal into a "waste" of the price of the DDP.

So if you think you would often want the soup/salad as your meal, I would strongly suggest you simply skip the DDP and pay OOP.
