Hi y'all just curious to know what y'all will be cooking at your site on the 24th?? Hubby and I are thinking about staying at the fort instead of driving to family 4 hrs away...any ideas would be awesome!!!:santa:
 
I am making prime rib and potatoes. Leftovers will be for sandwiches on the way up to Destin.

As far as Christmas Eve dinner....how about grilling some nice steaks? Or, you could premake a tray of lasagna. Or do what we do on Christmas Eve at home...prepare several different appetizers and do a "finger food" kind of dinner. Can be as simple or fancy as you like. Then go looping to see all the lights, and enjoy an after dinner beverage of your choice.

You could get an electric roaster oven and do the traditional ham or turkey dinner.
 
I'm SO jealous that you get to do Christmas at the Fort. This is definitely something I am going to have to convince the wife to do!

To answer your question, you could get really ambitious and smoke a turkey on the FW grill. :santa:

Just don't leave a dangling participle. I had a teacher tell me I left a dangling participle once. I told her "nope, I zipped up!".
 
Lasagna (already made an in the freezer) and then prime rib on Christmas day that will be done one the RVQ barbie outside.

We actually did a 9 /11lb turkey one Thanksgiving while dry camping on the PSU campus for a home game when our son was a student there. Also, DW did a couple of pies and had a traditional dinner in a cow pasture :rotfl::rotfl:

Unfortunately doing something like that with our current trailer is a no go since they put in the smaller oven that I hate and we now rarely use. There is a huge difference in the 21" and 24" oven that we have had.

How about a couple New York Strip steaks and baked potatoes on the grill. Maybe some grilles asparagus. Dessert would be a nice cheesecake. Enjoy your trip and Merry Christmas. :cool1::banana:

I cooked two strips and two tenderloins. Froze one strip and one tenderloin for French Dip later at FW.

It's corned beef, cabbage and onions/potatoes tonight :woohoo: ... trailer really smells good right now :thumbsup2:

we've done mac n cheese with cheese dogs on christmas eve. mmmmm such a good camping meal :)... lol but, we really have had it then.

Grilled Turkey

The very first thing you must do is make a LARGE batch of KUNGALOOSH.
Grilling this bird is going to take a while so you may as well enjoy freah beverages while your at it.

Use your charcoal grill. A 12-pound turkey is the largest that will fit most grills.

The Tools

To grill your turkey, you'll need:
Kungaloosh
Good-quality charcoal briquettes: about 20 pounds
Disposable aluminum roasting pan
Soaked wood chips, (if desired)
An accurate meat thermometer
Tongs and heavy-duty oven mitts
Recommended: a thermometer on your grill or deep-fat frying thermometer placed through the vent on the grill's lid
Prepping

Grilling

Essentially, you'll be using your grill as an outdoor oven: you want a moderate, even temperature rather than searing heat. Arrange the coals on one side of the grill only--you will use the empty side for the drip-pan. When the coals are covered with white ash, add a handful of damp wood chips. Add more wood chips any time you add more charcoal.

Lightly oil the grill's grate. Brush the skin of the turkey with oil or rub it with butter to prevent it from sticking.
Set a disposable aluminum roasting pan next to the hot coals. This will catch drippings and prevent flare-ups.
Adjust the grill's vents so they are open halfway.
Many recipes suggest roasting the turkey in a second disposable pan, adding water, wine or aromatics to the roasting pan for basting.
If your grill is outfitted with a thermometer (or you have inserted a deep-fat frying thermometer through the vent), check it. Aim for 350 degrees F (175 degrees C), but don't get hung up on a perfect and constant reading.
Roast the turkey until the thigh meat registers 165 degrees F (75 degrees C). This may take two to three hours or longer, depending upon the heat of the fire and size of the turkey.
Avoid opening the lid; conserve heat. Rotate the turkey as necessary for even cooking.

When your bird id ready to eat, make another batch of Kungaloosg and make a evening of it.
