I am making a ham for Christmas dinner and the sides I have planned so far are broccoli casserole, au gratin or scalloped potatoes, salad and rolls. I feel like I am missing something. I was thinking of making some fruit salad but I didn't know if that would be best. Any ideas?

How about Ambrosia? You can make it ahead.

If you haven't made it before:
2 cans fruit cocktail, drained
2 small cans mandarin oranges, drained
1/2 package mini mashmallows
16 oz sour cream
(optional) shredded coconut

Mix all together in a bowl and chill. Yum. My DH doesn't eat it, but the kids and I LOVE it!

I admit, though, I read your thread title and immediately thought "You mean you forgot Cranberries, too?" from on of my favorite Christmas songs, lol.

What??? No Green Bean casserole??? Isn't there like some unwritten rule that says you must have Green Bean casserole at Christmas??

Maybe that's just our wackadiliack family.

I like the Ambrosia idea.

Anytime we have ham we always have devil eggs. I also like the ambrosia idea.

Deviled eggs here too, plus cranberry sauce. It's not just for turkeys! :rotfl: We do keep the menu pretty small though--I hate overstuffing myself!

What abput appetizers and desserts? The best part, imho.

Well I don't know about appetizers but for dessert we will have Christmas cookies of course and I will make a pecan and a coconut cream pie. :cloud9:

Paula Deen has a receipe for a pineapple casserole that I think is very good. It goes well with ham. You can get the receipe on the food network website.

I like to do fresh fruit with ham, it cuts the saltiness from the meal, so ambrosia would be nice, as OP noted. Or just cut up some fresh fruits of yr choosing, which could also be used as an easy appetizer, you might want to set out a couple of cheeses & some interesting crackers to round out, if you get a crowd

We like sweet potatoes, baked when I am in a hurry or mashed & seasoned.
cornbread or spoon cornbread is nice

we also like the mango applesauce. As OP suggested, baked beans are easy. If you make them yourself, do it the day before, they'll taste better & you won't be tying up the oven

try making sweet potatoes, or mixed veggies, or even canned cranberry sauce. its all delicious

Grape Salad....we always have this and everyone loves it!

2 lbs of Red Seedless Grapes
8 oz cream cheese
8 oz sour cream
1 tsp vanilla
1/2 cup sugar
1/2 cup brown sugar
1/2 cup chopped pecans (optional)

-Clean grapes and place in a 9 x 13 pan
-mix cream chees, sour cream, sugar (white) & vanilla until creamy
-fold mixture into grapes
chill until ready to serve. Just before serving top with brown sugar & pecans

This is heavenly and we ususally serve it right with dinner as a fruit salad.

That's my menu too. I'm doing some appetizers in the afternoon so I feel like it's enough. Doing cookies for dessert too.

Ohhh, this sounds so good! I don't think I'd wait to have ham to enjoy that one!

We're having:
Ham
Mashed Potatoes w/ Red Eye Gravy
Paula Deen's Corn Casserole
Carrot Casserole
Sauteed Green Beans w/ Roasted Red Bell Peppers, Garlic and Pine Nuts (very Christmasy looking)
Dinner Rolls

My family always likes this served with ham.

Baked Pineapple

4 -8oz cans of Pineapple tidbits, drained
1/2 c. flour
1/2 c. sugar
2 c. grated cheese
1 stick of margarine
ritz crackers

Put pineapple in baking dish. Mix flour and sugar and sprinkle over pineapple. Top with cheese, then crushed crackers and dot with margarine.
Bake at 325 until bubbly.

We're having:

Ham
Scalloped potatoes (no mother, not from a box, lol)
Green beans
Corn
rolls
macaroni and cheese (for my brother who eats nothing else)

My parents (and obviously my brother) are very picky. They won't touch anything that they think looks different, eat very few veggies and no fruit. I don't like limiting my menu this much, but there's not point cooking a bunch of food they won't eat. Plus, we have dinner with the IL's the next day, so we get it all there.

We are having

Herb roased prime rib
Twice baked potatoes stuffed with butter, bacon, chives, sour cream and cream cheese
Vegetable gratin
Dinner rolls
I'm making home made egg nog and Sex in a bowl and maybe a pecan pie

Wow - y'all make our family look like total gluttons! LOL!

We have ham, turkey, dressing, gravy, sweet potatoes, scalloped tomatoes, macaroni and cheese, potato salad, green bean casserole, corn pudding, pears with cheese on them (it's something DH's aunt likes - they aren't bad), broccoli casserole, and I know I'm forgetting something. Rolls! Oh and cranberry sauce. Desserts are a whole other meal - pecan pie, lemon pie, pumpkin spice cake, a birthday cake for Jesus, 4 kinds of cookies, chocolates, truffles, a chess pie, and vanilla wafer cake (sounds REALLY odd, but it's very yummy! It's DH's grandmother's recipe and it's not Christmas without it).

Christmas dinner is like Thanksgiving, only with more desserts, and then after the meal you get presents instead of football! :rotfl2:

Laurie, hoping to get in some extra time at the gym prior to eating all this! :teeth:

ETA - forgot the congealed salads - strawberry and blueberry.

and Trip - that pineapple thing sounds wonderful - I may make that too! :goodvibes
