Christmas Dessert

I just can't decide what to serve for dessert on Christmas Eve..... My family always has pumpkin pie but DH doesn't care for it. I wanna shake things up a bit this year. :p

Any favorites out there?? Any recipes that you would love to share??
 
Peanut Butter Chocolate Chip Cheesecake is always a fave at our house. But we don't limit ourselves to one dessert! We also have 3 kinds of homemade fudge: milk chocolate, chocolate mint, and butterscotch, plus lemon squares, chocolate-dipped pretzels, sour cream apple pie, banana cream pie, macaroons, hazelnut biscotti, gingerbread cookies, candy cane brownies, and a couple of new contenders each year.

There are 5 in my household, but we do a Christmas Eve open house with 20-45 guests.

Let me know if you're interested in any of the stuff in my "arsenal".

No recipes, but if you want to "shake it up" you might consider a Ben & Jerry's ice cream cake--we have bought these for several friends/family gatherings and people love them!
 

Oreo crust, peppermint ice cream, and fudge sauce drizzled over the top!!!
 
I would order someting from the bakery. It would be something festive and an item I could not make myself. That would also free up some time and reduce your stress.

How do you make the chocolate mint and butterscotch fudge?

Do you make this like a pie or just crumble oreos on the bottom of a bowl and top with the icecream and fudge sauce?

We always have

Rice Pudding but in addition to that we'll have Italian cream cake from Sam;s club. Flourless Chocolate cake with burnt caramel ice cream. I make the pudding, I buy the cake and my daughter makes the last 2 items.

Oops! Didn't get my email notifications, so I'm just seeing your post for the first time! Sorry!

You need only 4 ingredients for the basic recipe:

18 oz. chocolate bits
1 can sweetened condensed milk
1 tsp vanilla extract
1 pinch salt

Line a 9 inch square pan with heavy foil and set aside. Melt the chocolate and the sweetened condensed milk together (in the microwave in 20 second increments, stirring between each increment, or on stovetop in a medium pan, stirring frequently to be sure choc doesn't scorch). Once all the chocolate bits are melted, remove the pan from the heat and add salt and vanilla. Spread mixture into foil-lined pan and refrigerate until completely cool. Cut into 1 inch square and serve.

The whole cooking/prep process can be done in under 15 minutes!

For the mint, I eliminate the vanilla extract and use peppermint extract instead. (Be sure to use good quality chocolate for the best results. I like Ghirardelli milk chocolate bits)

For the butterscotch fudge, replace the 18 oz of chocolate bits with 24 oz of butterscotch bits (the butterscotch bits don't set up as well as chocolate, so you have to use more of them to get the texture right - otherwise you end up with runny fudge - ack!)

I've been making this fudge (and all its variations) for EVERY holiday since I was 14. It's become my trademark, and it looks and tastes like it's a lot of trouble to make - but it's easy!!!
