Could someone share their experiences on Christmas day/Christmas weekend? I'm wondering if the crowds would mean that you couldn't comfortably walk around, if there would be long lines for food/bathrooms, and in general if it's too packed to have a good time.

We would have express pass due to our hotel.

We've been at PB twice on Christmas Day in the past five years. We enjoyed it. Christmas Eve was not bad at all and Christmas morning was lots of fun. We saw the grinchmas show in the morning. We've seen this show dozens of times and it was so special actually seeing it on Christmas Day. We had Christmas dinner at trattoria at PB and it was amazing. By that afternoon the crowds had arrived at the parks. The day after Christmas was actually the worst crowds for us. But I'd do it again in a heartbeat.

It will be very crowded, but take advantage of the hotel's early entry and express pass. When the parks close, CityWalk is a thick sea of people. Make sure you have a reservation for dinner. We've been there for Christmas too, and also at Sea World. We'll be returning this Christmas. While there are crowds and more crowds I love that time of year.
